Environmental conditions, e.g. pH and the presence of Fe2+ are well known factors that influence the product profile of the myrosinase catalysed hydrolysis of glucosinolates. Depending on the plant genera, the species and tissue of origin myrosinase isoenzymes (thioglucohydrolase EC 3.2.1.147) have different characteristics in terms of MW, subunit composition and pI. However, the influence of these parameters on the outcome of glucosinolate hydrolysis has not been traditionally studied, which hinders the full exploitation of the catalytic potential of these enzymes. BACKGROUND: Supplying egg-laying hens with different forage materials may influence egg production and quality. The aim of this study was to examine the short-term effects of standard feed plus 70 g day−1 per hen of three coloured carrot varieties (orange, yellow and purple) as forage material in comparison with a standard feed control on egg production, egg yolk colour and deposition of carotenoids in the yolk. RESULTS: Carrot supplementation reduced feed intakes significantly, but not on a dry matter basis. Changes in phytic acid content, activity of phytase and α-amylase in rye breads were determined during rye bread making. The activity of phytase is highest in grain and flour whereas the activity in the sourdoughs is almost the half of the activity in the flour. The activity was unchanged in the dough after mixing and proofing. Degradation of phytic acid (IP6) into lower inositol-phosphates and free phosphate is almost completed during the production of rye bread with long fermentation time whereas the degradation is less completed when whole grains are included in the recipe. Abstract – The effect of different fertiliser types (cal-cium ammonium nitrate, fresh farmyard manure, composted farmyard manure and nettle extract) on the hygienic quality of fresh and washed lettuce was tested in two trials in summer 2004 and 2005. The hygienic quality was described by total aerobic bacte-rial count and level of coliform bacteria, Escherichia coli, Salmonella Enteritidis, Enterobacteriaceae. No Salmonella Enteritidis was detected in any sample. E. coli was isolated independent of the fertiliser type in low concentrations.
