This leaflet provides a practical overview for consumers of what is done to secure the authenticity and integrity of 7 types of organically produced foods, where improvements are possible and what the consumers can do to support efforts that meet their demands. Influence of pH and type of myrosinase complex on the products obtained in the myrosinase catalysed hydrolysis of glucosinolates – a MECC study Organic Eprints

Environmental conditions, e.g. pH and the presence of Fe2+ are well known factors that influence the product profile of the myrosinase catalysed hydrolysis of glucosinolates. Depending on the plant genera, the species and tissue of origin myrosinase isoenzymes (thioglucohydrolase EC 3.2.1.147) have different characteristics in terms of MW, subunit composition and pI. An Hand verschiedener Beispiele aus dem Bereich der Gentechnologie konnte gezeigt werden, dass molekularbiologische Methoden mit ökologischen Prinzipien nicht vereinbar sind. Der produktbezogene Qualitätsnachweis, der vor allem auf Inhaltsstoffzusammensetzungen, invitro Tests und Akuttoxizitätstests beruht, erscheint nicht ausreichend, um die Qualität von GVNahrungsmittel umfassend zu definieren bzw. eine bessere Qualität dieser Produkte nachzuweisen. CONCLUSIONS Organic production systems can make important contributions to food supply stability and farmer livelihoods by establishing soil fertility, providing diversity and, therefore, resilience to food production systems in light of the many uncertainties of climate change. In particular, they contribute positively to food stability in terms of fertile and well structured soils, improved water retention, protection of biodiversity with beneficial side-effects on phytomedical stability and nutrients, and water use efficiency. Deposition of carotenoids in egg yolk by short-term supplement of coloured carrot (Daucus carota) varieties as forage material for egg-laying hens Organic Eprints

BACKGROUND: Supplying egg-laying hens with different forage materials may influence egg production and quality. The aim of this study was to examine the short-term effects of standard feed plus 70 g day−1 per hen of three coloured carrot varieties (orange, yellow and purple) as forage material in comparison with a standard feed control on egg production, egg yolk colour and deposition of carotenoids in the yolk. RESULTS: Carrot supplementation reduced feed intakes significantly, but not on a dry matter basis. With the Steigbild technique patterns are produced on thin-layer chromatographic paper and evaluated as a fingerprint of the sample as a whole. To be applied in routine analysis the method has to be standardised according to international standard norms. Phytase activity and degradation of phytic acid during rye bread making Organic Eprints

Changes in phytic acid content, activity of phytase and α-amylase in rye breads were determined during rye bread making. The activity of phytase is highest in grain and flour whereas the activity in the sourdoughs is almost the half of the activity in the flour. The activity was unchanged in the dough after mixing and proofing. Degradation of phytic acid (IP6) into lower inositol-phosphates and free phosphate is almost completed during the production of rye bread with long fermentation time whereas the degradation is less completed when whole grains are included in the recipe. Over recent years, several studies have shown that differences in the composition of organic and conventional milk are either small or non-existent. The effect of different fertilisers on hygienic quality of lettuce Organic Eprints

Abstract – The effect of different fertiliser types (cal-cium ammonium nitrate, fresh farmyard manure, composted farmyard manure and nettle extract) on the hygienic quality of fresh and washed lettuce was tested in two trials in summer 2004 and 2005. The hygienic quality was described by total aerobic bacte-rial count and level of coliform bacteria, Escherichia coli, Salmonella Enteritidis, Enterobacteriaceae. No Salmonella Enteritidis was detected in any sample. E. coli was isolated independent of the fertiliser type in low concentrations. The total aerobic bacterial count, the levels of Enterobacteriaceae and coliform bacteria tended to be lower after application of mineral fertil-iser but on a very low level. The annual crop of forest berries in Finland has been estimated to be more than 500 million kilograms. In Sweden the crop is estimated to be also more than 500 million kilos. In Finland about 10 % of the crop is picked for own use or commercially, in Sweden only 7 %. The total commercial forest berry picking in Nordic countries is about 35 million kilos.
