Assessing organic food quality: Is it better for you? Organic Eprints

This report was presented at the UK Organic Research 2002 Conference. Any attempt to answer the question ‘is organic food better for you?’ requires an assessment of the safety, nutritional content and biological value aspects of food quality. Previous reviews have been unable to reach definitive conclusions after failing to ensure only valid comparisons are considered. When methodologically flawed studies are screened out and a complete assessment of nutritional quality is made, collectively, the available evidence supports the hypothesis that organically produced food is superior in terms of safety, nutritional content and nutritional value to that produced non-organically. Differences between real and perceived quality among users of school catering – survey on 40 Italian schools Organic Eprints

This report investigates how food quality is perceived in school canteens and to what extent this perception, influencing public opinion about the catering service quality, reflects the real quality of served meals. The objective of this work is therefore to investigate the relationships between real and perceived quality of meals in the sustainable school catering sector. The measurement of the emission of light from entire samples is a non-destructive system that is already in use for inspecting foods. The biophoton flourescence excitation spectroscopy presented here differs from the classical biophoton evaluations in that its evaluation follows excitation by different wavelengths of light. Selected groups of foods generate typical spectral distributions. These are suitable as the basis for evaluation when inspecting foods, especially seeds such as grains, peas and beans, oilseeds etc. from test cultures using a variety of cultivation methods. High variability in anthocyanin contents between different blackcurrant varieties Organic Eprints

The results confirm that blackcurrant is a good source of anthocyanins. However, remarkable variation in the anthocyanin content between varieties is evident. The anthocyanin profile is always dominated by four major anthocyanins, yet some variation appears in their relative proportions. The high anthocyanin content is usually most desirable in the blackcurrant products and this study shows that the choice of variety may have a great impact on it.

Vergleichende Qualitätsuntersuchungen von alten und neuen Gemüsesorten zur Entwicklung von Zuchtzielen für den ökologischen Gemüsebau Organic Eprints

Am Beispiel der Gemüsearten Möhren und Kohl wurden alte und neue Sorten sowie Sorten aus biologisch-dynamischer Selektion auf ihre Qualitätsmerkmale hin verglichen. Der Anbau erfolgte nach biologisch-dynamischen Landbaumethoden auf dem Dottenfelderhof in Bad Vilbel. Im Projekt kam ein breites Methodenspektrum zum Einsatz, das Geschmacksuntersuchungen mittels Humansensorik und instrumenteller Analytik umfasste. Diese Untersuchungen geben Aufschluss über die Zusammenhänge verschiedener äußerer und innerer Qualitätsmerkmale von insgesamt 39 Möhren- und 30 Kohlsorten. Organic foods in Danish municipal school food systems – a multistakeholder analysis of available evidence on constraints and perspectives Organic Eprints

Previous studies have shown that organic supply and healthy eating initiatives in school food services share common features. Both types involves changes in supply, the collaboration of a number of different stakeholders and both include a physical food part as well as a non physical symbolic aspect. Studies have shown that introducing organic food in public food systems seems to affect the nutritional profile of the food service and anecdotal evidence suggest that organic supply forces food services to rethink menus leading to healthier menus and that introduction of organic foods often leads to adoption of a food & nutrition policy. Die vorliegende Studie untersucht das allergene Potential von Möhren in Abhängigkeit von der Anbauweise. In zwei aufeinander folgenden Vegetationsperioden (2005 und 2006) wurden zwei Möhrensorten, die samenfeste Sorte Rodelika und die F1 Hybridsorte Nerac, auf ökologisch oder konventionell bewirtschafteten Anbauflächen im Kreuzversuch angebaut. Am Erntegut wurden die Expression des allergenen Proteins und die Transkriptionsativität des Hauptallergens Dau c 1.01 und dessen Variante Dau c 1.02 bestimmt. The introduction of genetically modified (GM) crops in the EU has raised questions concerning gene dispersal and co-existence with non-GM farming. Quantitative estimates of the gene dispersal from fields with GM crops to fields with conspecific non-GM crops (conventional or organic) are therefore needed in order to suggest isolation distances and other management strategies to keep GM-pollination below acceptable threshold values. Sammenhengen mellom engdriftssystemer og melkekvalitet i økologisk landbruk skal undersøkes i et nytt prosjekt. Valget mellom kortvarig og langvarig eng er avgjørende for den botaniske sammensetningen i drøvtyggerfôret og en kan forvente at melkas kvalitetsegenskaper påvirkes. Tolv økologiske melkebruk ble paret med 12 konvensjonelle i Midt-Norge og inngår i en toårig feltstudie som startet i januar 2007. Seks gårder i hver gruppe er valgt ut blant gårder med kortvarig eng og 6 blant gårder med langvarig eng. Annenhver måned skal det samles inn melkeprøver fra gårdstanken og fôrprøver på alle gårdene. This work addresses possible ways in which animal manure might become contaminated by undesirable elements and how such manure might pose a risk to the health of soil organisms, animals, plants and humans. The purpose of the project was to gain more knowledge concerning potential contamination of manure by undesirable elements, such as residues of veterinary medicines and pesticides or high levels of heavy metals.

Økologiske kødprodukter konserveret med bær, urter eller krydderier Organic Eprints

Forbrugerne ønsker nye kødprodukter i stedet for de gamle klassikere som skinke, kødpølse og spegepølse. Samtidig vil de gerne have madvarer med mindre salt og færre kemiske konserveringsmidler som fx nitrit. Ved at konservere med bær, urter og krydderier kan man udnytte de naturligt forekommende konserveringsmidler i planter og samtidig fremstille kødprodukter med en helt ny smag. I samarbejde med Institut for Fødevarer, Årslev og MAPP fra Århus Universitet samt virksomhederne Hanegal og Tulip arbejder DMRI Teknologisk Institut på at udvikle helt nye kødprodukter, der er tilsat udvalgte bær og urter med konserverende virkning.

Exploiting grain bioactivity for improved nutrition and health Organic Eprints

Foods should be made available to deliver more grain fibre and outer layers of the grains, while also addressing the consumer expectations of palatability and convenience. This demands for new ingredients high in grain phytochemicals and with good technological properties. The natural diversity in grains offers a good basis for tailored fractionation and bioprocessing.
