ABSTRACT The aim of this research was to investigate the physicochemical and functional properties of fresh and pasteurized chicken and duck egg albumens. The results showed that pasteurization of both chicken and duck albumens significantly decreased (p≤0.05) viscosity, but had no impact (p>0.05) on pH or free sulfhydryl groups. Chicken albumen was shown to have higher (p≤0.05) foam expansion, but lower (p≤0.05) foam stability than duck albumen. Pasteurization decreased (p≤0.05) the foam expansion of both albumens while decreasing (p≤0.05) the foam stability only of duck albumen. Except for the meat- and egg-type strains used in commercial poultry farms in Brazil, there are no scientific reports about the origin of birds from the genus Gallus that have been introduced in this country with domestication or fighting purposes. Therefore, the aim of this study was to identify the position of the Brazilian Game Bird in the phylogenetic tree of the genus Gallus by nucleotide sequence analysis of the mitochondrial DNA D-loop region. The results indicate that fighting roosters comprise two different clusters within the species Gallus gallus domesticus. Two experiments were conducted to evaluate the nutritional quality of two sources of low-oil distiller's dried grains with solubles (DDGS) and their pigmenting ability for broiler chicken skin and egg yolks. In Experiment 1, 360 Bovan-White hens between 69 and 77 weeks of age were randomly assigned to five dietary treatments with 6 replicates of 12 hens each. The aim of this study was to follow-up the physiological variations in the development of the bone tissue, associating them with the egg production curve. This study was carried out in the facilities of the Faculdade de Medicina Veterinária e Zootecnia of the UNESP, Botucatu, Brazil. ABSTRACT This study investigated the effects of incubator carbon dioxide (CO2) and oxygen (O2) levels, and egg weight (EW) on embryo mortality (EM) and hatchability of fertile eggs (HFE). The objective of this study was to determine thermal comfort ranges, as evaluated by air temperature and black-glove temperature and humidity index (BGTHI), for starter meat-type quails. Nine hundred quails were randomly distributed into five environmental chambers. Each chamber was programmed to provide different temperatures weekly. The following thermal environments were provided: SC - severe cold, MC - moderate cold, TC - recommended comfort environment, MH - moderate heat, and SH - severe heat.
