AN ECONOMETRIC ANALYSIS OF DEMAND FOR MEAT AND FISH PRODUCTS IN KOREA AgEcon

This study analyzes the structure of Korean meat and fish product demand. The Linear Approximate Almost Ideal Demand System (LA/AIDS) is used to estimate Korean meat and fish demand. Since the expenditure term is endogenous, the three-stage least squares (3SLS) estimator is used to estimate the demand system. Empirical results indicate that beef imports would increase with increases in per capita income. If imported beef becomes less expensive as a result of the trade liberalization policy adopted by the Korean government, Hanwoo beef would not be competitive and could lose its market share. Pork and chicken would be able to maintain market shares, but most fish products would lose market shares.

WHOLESALE DEMAND FOR USDA QUALITY GRADED BOXED BEEF AND EFFECTS OF SEASONALITY AgEcon

This study quantifies the differential in demand between different USDA quality grades of beef and the interaction between quality graded beef and other meats. We provide estimates of meat retailer own and cross price demand elasticities for USDA Choice and Select boxed beef. Results indicate that meat retailers have more elastic demand for lower quality graded beef. Seasonal analysis indicates demand for both beef quality grades becomes highly price inelastic during the summer “"cook-out"” months. The two beef quality grades are strong substitutes during the fall and winter. However, Select beef is not a substitute for Choice beef in the spring and summer.

Factors Affecting Demand for Branded Beef AgEcon

This paper finds that branded fresh beef expenditures increased from 20.8 percent in 1998 to 28.6 percent in 2004 for all fresh beef expenditures. In addition, geographic location, household income, household race, and household size were found to affect the likelihood of branded fresh beef purchases in 2004.

Impacts of Promotional Tactics in a Conditional Demand System for Beverages AgEcon

This study examined the impacts of four promotional tactics—features, displays, features and display together, and temporary price reductions—in context of a conditional demand system for 12 beverages. The Rotterdam model with promotion effects specified through the Tintner-Ichimura-Basmann relationship was used in the empirical study. The estimated conditional-demand equations exhibited relatively strong own- and cross-promotional effects, indicating a relatively high level of competition for market share among the beverages studied.

At-Home Convenience Food Consumption and BMI AgEcon

A variation of the household production theory was used to select relevant explanatory variables for the demand for convenience foods. A convenience food index was used to measure the convenience in food preparation. Because of the nature of the measure of convenience, the tobit regression technique was used to examine the importance of these explanatory variables to the demand for convenience foods. Results show that the presence of children in a household increases the demand for convenience, especially in those households that have children of different age groups. HOW LARGE ARE NON-BUDGET-CONSTRAINT EFFECTS OF PRICES ON DEMAND? AgEcon

Elementary consumer theory assumes that prices affect demand only because they affect the budget constraint (BC). By contrast, several models suggest that prices can affect demand through other channels (e.g. because they signal quality). This alternative conjecture is consistent with evidence from marketing studies. However, neither theory nor evidence is informative regarding the magnitude of non-BC effects. The key econometric challenge arises from the fact that a change in prices typically also changes the BC. This paper uses a lab and a field experiment to disentangle BC from non-BC effects of prices on demand. The study analyzes the impacts of economic and noneconomic factors on import demand for canola oil. The import demand pattern for canola oil in the United States is influenced by changes in the world's oilseeds market and government oilseeds programs and policies, including tariffs and subsidies. Unstable Individual Preferences and Stable Aggregate Demand: French Consumers’ Willingness to Pay for Farmed and Wild Cod AgEcon

We use panel data from two experiments conducted five months a part to investigate the stability of individual preferences and aggregate demand for five types of fish. Even though the bids in the two experiments are positively correlated, they clearly suggest that the individual preferences are unstable. This may be explained by internal desire for variety or by external effects such as new relevant information, seasonality in preferences, changes in the quality of the fish, and changes in the market price of fish. The Impact of Domestic and Import Prices on U.S. Lamb Imports: A Production System Approach AgEcon

As U.S. lamb imports increased relative to domestic production, and the relative share of chilled to frozen lamb imports increased, importers of chilled lamb have become less responsive to domestic and import prices, while the direct opposite is the case for frozen lamb imports. From 1990 to 2003, chilled lamb imports from Australia and New Zealand became less and less responsive to U.S. prices, and frozen imports became more responsive. Unconditional own-price elasticities also show that, over time, imports of chilled lamb became less responsive to import prices while frozen imports became more responsive to import prices.

Buyer and Seller Responses to an Adverse Food Safety Event: The Case of Frozen Salmon in Alberta AgEcon

Fish is a low-fat protein source high in omega-3 fatty acids, but in 2004 consumers also heard that farmed salmon had high levels of polychlorinated biphenyl (PCBs). This research evaluated how Canadian consumers and processors reacted to the conflicting health messages. Demand estimates and time-series analysis of 2001-2006 frozen meat scanner data in Alberta, Canada show a significant drop in salmon expenditure share following the PCB finding. The industry responded by launching low-priced wild salmon products, which contributed to significant demand expansion. The analysis illustrates how a food safety threat was averted and even served as a catalyst for growth.

Consumer Demand for Ahi Poke (Raw Tuna Salad) in Hawaii AgEcon

Ahi poke (raw tuna salad) has significant role in Hawaii culture and economy. A consumer survey in Hawaii was used to examine consumers’ purchasing intentions of ahi poke. A censored analysis was conducted to analyze the demand and tie with various consumer characteristics. Results show that many consumer eat ahi poke frequently and different consumer profiles will lead to large differences in their demand. Information obtained in study may help producers and retailers to better target their marketing strategies and increase sales.

The Main Determinants of Insurance Purchase: An Empirical Study on Crop Insurance Policies in France AgEcon

Using data for 2002-2005 on a representative survey of French farms (FADN-RICA), we investigate the different factors that lead farmers to insure against crop risk. Our analysis takes into account a mix of both standard individual, financial and agricultural criteria. Cross-sectional and longitudinal analyses as well as logistic regressions underline the main differences between insured and non-insured farms. Compared to non-insured farms, we find that insured farms present greater financial and agricultural sizes, a more diversified production and have been motivated by the occurrence of recent catastrophic climatic events.
