Le bio à la cantine. Impact sur les attitudes et comportements des parents d'élèves Organic Eprints

L’objectif de cette recherche est d’examiner l’impact que l’introduction de produits biologiques au sein des cantines scolaires peut avoir sur les croyances et les comportements des parents d’élèves. Au niveau théorique, cette introduction correspond à la création ou au renforcement de normes sociales, normes injonctives et/ou descriptives, qui, selon la théorie du comportement planifié, sont des antécédents de l’intention comportementale. Les résultats montrent, d’une part, un impact significatif et conséquent sur les croyances, l’attitude et les fréquences d’achat de produits bio des parents d’élèves et, d’autre part, le rôle modérateur de la fréquence de l’introduction sur cet impact. Healthy Growth of Value Based Organic Food Chains: Management, value communication and perspectives of growing values-based food chains Organic Eprints

Our working group discussed hampering and enabling factors for the management of increasing quantities of organic food produce. Andrea Borec from Maribor University presented the main idea of the Core Organic II Project HealthyGrowth. Susanne von Münchhausen from Eberswalde University, Germany, showed first results of the case study analysis in respect to management issues during expansion. During the discussion, the workshop focused on the development of two Slovenian farmers’ cooperatives. Representatives from the Ekodar label for organic beef and from Planika Dairy highlighted business strategies and the specific challenges the businesses were and are currently facing.

Wahrnehmung und Beurteilung von Verkaufsförderungsaktionen für Öko-Lebensmittel im allgemeinen Lebensmitteleinzelhandel Organic Eprints

This contribution presents results of post purchase consumer interviews, which were done parallel to sales promotion activities in conventional supermarkets. The findings of this study allow an evaluation of background information about consumer percep-tion and appraisal of sales promotion activities on organic products and through this, provide additional insights into the effectiveness of sales promotion. Only if consumers really take notice of the sales promotion activities in the shops and judge these posi-tively, sales promotion can be effective and successfully increase sales volumes. The research findings showed that especially tasting activities give rise to high consumer attentiveness and provoke unpremeditated buying.

Ziel dieses Forschungsvorhabens war die Analyse des deutschen Marktes für ökologische Äpfel einschließlich der Maßnahmen, die deutsche Erzeuger bzw. Erzeugerzusammenschlüsse ergriffen haben, um sich am Markt zu behaupten. Hieraus wurden zum einen Handlungsempfehlungen für die deutschen Erzeuger von ökologischen Äpfeln erarbeitet, um den zukünftigen Herausforderungen begegnen zu können. Zum anderen wurden aus der, zumindest bislang, relativ erfolgreichen Marktbehauptung deutscher Apfelerzeuger Analogieschlüsse für andere Öko-Produktmärkte abgeleitet. Cette étude exploratoire visait à produire des références technicoéconomiques là où, auparavant, il n’en existait aucune. Elle a permis d’obtenir des chiffres réels d’entreprises, d’établir les points de repère techniques et économiques pouvant aider à la prise de décision et de faire ressortir les différences entre les entreprises biologiques et conventionnelles. Consumer preferences for additional ethical attributes of organic food Organic Eprints

This paper examines the relevance of additional ethical attributes of organic food for consumers’ purchase decisions. By means of an Information-Display-Matrix (IDM) and an accompanying consumer survey, the information acquisition behaviour of consumers regarding seven additional ethical attributes and the product price of organic food was investigated in five European countries. The ethical attributes, ‘animal welfare’, ‘regional production’ and ‘fair prices to farmers’ turned out to be the most important. The results also show that the vast majority of consumers of organic food was willing to pay higher prices for organic products with additional ethical attributes. Local and ecological food consumption - case studies in Finland and Sweden Organic Eprints

Preliminary results show that in the Juva district amount of energy according to the purchase diary is 7.6 MJ/person/day and in Järna district the amount is 9.4 MJ/person/day. Our results are in a range that is reasonable.
