Eine Verbesserung der unzureichenden Datenbasis über den Öko-Markt in Deutschland stand im Mittelpunkt des Projektes. Dazu wurden bestehende Datenquellen daraufhin geprüft, ob sie die gewünschten Daten liefern und für welche Vermarktungsebenen bereit stellen können. Die ursprünglich angedachte Totalerfassung über die Kontrollstellen erwies sich als nicht umsetzbar. Zweckmäßige Erweiterungen vorhandener Statistiken und Erhebungen zur Informationsbeschaffung für den Öko-Bereich wurden am Beispiel Öko-Mühlen getestet. In order to establish the extent to which each of the technical sequences regarding the preparation of wine for bottling (3 final filtration thresholds: 0.65µm, 2µm and 5µm) were in keeping with the cellar objectives and to measure the analytical, microbiological and organoleptic impact on the wine for each sequence, over a one-year period, we monitored a red wine prepared according to the 3 methodologies. A low initial microbiological level (absence of Brettanomyces, Pédiococcus and Lactobacillus), combined with a stable active SO2 content between 0.4 and 0.5 mg/l, enabled analytical and microbiological stability of all the wines compared. Das Forschungsprojekt „Von der Agrarwende zur Konsumwende?“ beschäftigt sich mit den Effekten der Agrarwende auf die Wertschöpfungskette. Im Mittelpunkt der Analyse steht die Frage, wie sich die „Agrarwende“ mit dem erklärten Ziel, bis zum Jahr 2010 den Anteil der ökologisch genutzten Landwirtschaftsfläche auf 20 % zu erhöhen (Künast 2001), auf die verschiedenen Wertschöpfungsstufen auswirkt. Wer zu Hause Wert auf möglichst frisches, gesundes und nachhaltig produziertes Essen legt, der nimmt sicher auch dementsprechende Angebote in der Gastronomie begeistert an. Trotzdem gibt es bisher nur wenige Kooperationen zwischen der Biolandwirtschaft und der örtlichen Gastronomie. Public catering in Finland has strong historical roots from the 19th century, connected with the rise of the national state, industrialisation, democracy and modern times in general. The school meal system developed hand in hand with work place meal services, and inherently the aim was to offer lateral support for workers' and pupils' activities by healthy and wholesome nutrition. The public catering had initially a strong label of welfare services and implied economical use of ingredients. Biogas production is becoming increasingly important for organic farms. Based on an empirical study, designed as a census, the structure and specifics of organic biogas production were investigated. Today an estimated 150 organic biogas plants in Germany exist; this corresponds to 5% of all biogas plants.
