Markedet for økologiske fisk Organic Eprints
Larsen, Erling P.; Nielsen, Max; Nielsen, Thorkild; Larsen, Villy J..

Organic foods in catering – the Nordic perspective Organic Eprints
Mikkelsen, Bent Egberg; Kristensen, Niels Heine; Nielsen, Thorkild.
Catering is beginning to be an important sales channel for organic foods in the Nordic countries. However implementing organic foods in today’s complex catering systems is far from easy. Therefore primary players in the fields of marketing and promotion or organic foods in catering have established a Nordic network. The Nordic network has been able to carry out a study on the perspectives in organic foods in catering through a grant from Nordic Industrial Fund and with the support from Danish Veterinary & Food Administration and Danish Technical University. The study has resulted in this report, which is prepared on the basis of interview meetings in the five Nordic capitals. The study has been carried out in close cooperation with partners in each of...

Underlying principles and actual problems for the processing of organic meat products Organic Eprints
Nielsen, Thorkild.
The processing of meat products is regulated by a wide range of different national standards and regulations. Some countries have very strict regulations on additives for organic meat products. Standard setting often involves a balance between maintaining the purity and integrity of the organic system and ensuring that certain quality demands are met. Especially for meat this dilemma has been clearly recognized. Currently the most urgent challenge for the organic meat sector is to offer products with a high microbiological quality and safety without using critical additives like colouring agents or nitrite. The search for alternatives and alternative approaches to the use of nitrite in processed meat should be continued. Furthermore the discussion...

Økologien og giganterne Organic Eprints
Nielsen, Thorkild.

A comparative study of the implementation of organic food in school meal systems in four European countries Organic Eprints
Nielsen, Thorkild; Nölting, Benjamin; Kristensen, Niels Heine; Løes, Anne-Kristin.
Based on national reports from Denmark, Finland, Italy and Norway, describing the school meal systems and to which extent organic food is integrated there, this report identifies differences between the four countries and experiences made with organic food procurement and the dissemination of organic ingredients in school meals. Such knowledge will help to understand the possibilities and restrictions for increasing organic food in school meal systems, and to reveal the room of manoeuvre for public organic food procurement for youth in each country. In the report, similarities and differences of the national school meal systems in general are first discussed, because this context determines the scope of organic food procurement. The history and current...

Perspektiver for økologisk fisk Organic Eprints
Nielsen, Thorkild.

Nielsen, Thorkild; Hansen, Mette Weinreich; Kristensen, Niels Heine; Hansen, Stine Rosenlund.

innovative Public Organic food Procurement for Youth (iPOPY). Lessons learned from implementing organic into European school meals – policy implications. Organic Eprints
Kristensen, Niels Heine; Hansen, Mette Weinreich; Nielsen, Thorkild.
The introduction of organic food offers new dimensions to school meals, and schools offer new dimensions to organic food – when tackled properly. In this paper we present findings from the iPOPY research project that is funded by the ERA-Net, CORE-Organic-I funding body network. It is based on studies of school food policies in Denmark, Finland, Italy and Norway. The embedded food traditions and cultures have had different attention in these countries, why also food related consumption, institutions and markets are quite heterogeneous and dynamic. Whereas school food services are relatively widely embedded in the school systems in Finland and Italy, the Danish and Norwegian school food is predominantly defined by the packed lunch brought from home...

Kan opdrættede fisk være økologiske? Organic Eprints
Nielsen, Thorkild.

Research report on organic aquaculture and consumer perception – PART I Organic Eprints
Nielsen, Thorkild; Kristensen Dahl, Johan.
Surveys performed among consumers showed that the knowledge about sustainability and organic fish is relatively fragmentary; e.g. stories from the media detached from the context “overfishing”, not healthy fish farmed in Asia etc. Very few was able to identify specific rules for organic fish, and often they were mixed up with the MSC certification. Most part of the Danish organic fish production is currently exported to Germany and due to this the research project RobustFish has investigated the perception of organic fish among German consumers. In cooperation with Fachhochschule Münster Aalborg University has made a survey among German consumers on how they perceive organic fish. Does organic farmed fish exist? Organic Eprints
Nielsen, Thorkild.
Most part of the Danish organic fish production is currently exported to Germany and due to this the research project RobustFish has investigated the perception of organic fish among German consumers. In cooperation with Fachhochschule Münster Aalborg University has made a survey among German consumers on how they perceive organic fish. The investigations showed that the perception of organic fish is influenced by their general perception of farmed fish and their perception of agricultural production. Many consumers have a negative perception of farmed fish and rank the production alongside the industrialized agriculture – often contradicting the catch of vild fish in the sea. Specific for Germany is the existence of regional and local certified...

ORGANIC AGRICULTURE IN SOCIAL ENTIRETY - PRINCIPLES VERSUS PRACTICES Organic Eprints
Nielsen, Thorkild.
The requirements for processing in standards and regulations are only related to technical sub-jects directly oriented towards the production of the products. A broader view on social aspects in the processing company or the environmental influence of the processing units is not part of any governmental regulations for organic foods. In general it can be stated that the EU-Regulation 2092/91, with the exception of having rules for the use of additives and processing aids, no significant preferences or only tendencies regard-ing the possible ways to regulate or harmonise different aspects of organic food processing in a sustainable direction, have been identified.

Bio-Schulverpflegung in Italien, Finnland, Dänemark und Norwegen – Was kann Deutschland lernen? Organic Eprints
Nölting, Benjamin; Strassner, Carola; Løes, Anne-Kristin; Nielsen, Thorkild.
The policies and practice of school meal provision in Germany are currently in a dynamic transition led on by the introduction of a fulltime school system. One of the many issues being highlighted is its potential to increase the use of organic produce. The research project “innovative Public Organic food Procurement for Youth” (iPOPY; www.ipopy.coreportal.org) analyses the entire system. Results of the first comparison between Italy, Finland, Denmark, and Norway are presented here, as a background to discuss the German situation. Using a common guideline developed in iPOPY the types of school meal provision can be categorised as (a) warm lunch (IT, FI) or (b) fruit and milk subscription schemes to supplement a packed lunch (DK, NO). Italy emerges...

ROBUSTFISH: NEW POSSIBILITIES FOR GROWTH AND ROBUSTNESS IN ORGANIC AQUACULTURE Organic Eprints
Jokumsen, Alfred; Høglund, Erik; Lund, Ivar; Madsen, Lone; Pedersen, Lars-Flemming; Nielsen, Max; Nielsen, Thorkild; Larsen, Villy J.; Larsen, Erling P..
The aim of Robustfish project is to answer the following research questions: (1) Is it possible to select robust rainbow trout fry early in development before they enter the more cost intensive steps in the production cycle? (2) Does sustainable (non-fish based) dietary lipid sources affect stress resilience and immune-competence of the fry? (3) Related to (1) and (2): Is improved resistance to RTFS achieved? (4) How will the market respond to a significant increase in production of organic trout, i.e. consumer preferences and competiveness by companies in the value chain? RobustFish will strengthen the development of Danish organic trout production. In this respect the robustness of the fry to diseases is crucial, i.a. RTFS. The robustness of the fry...

Innovativ udvikling af (potentielle) nye produkter: En eksplorativ undersøgelse af kvalitet i økologisk fisk Organic Eprints
Nielsen, Thorkild.

Minimal and careful processing Organic Eprints
Nielsen, Thorkild.
In several standards, guidelines and publications, organic food processing is strongly associated with "minimal processing" and "careful processing". The term "minimal processing" is nowadays often used in the general food processing industry and described in literature. The term "careful processing" is used more specifically within organic food processing but is not yet clearly defined. The concept of carefulness seems to fit very well with the processing of organic foods, especially if it is reflected in a broader sense. Although there is no clear common definition of the concept of "careful processing", "care" is an essential value in organic food production encompassing care for the product, the environment and the people.
