We investigate how to theoretically and empirically incorporate demographic translating in consumer distance functions. Consumer distance functions yield inverse demand systems that are of interest when attempting to better understand questions of price formation. Translating procedures are important when incorporating pre-committed quantities, pre-allocated factors, or demographic variables (e.g., advertising, health or food safety information) in the inverse demand system. Examples are included for illustrative purposes. |

This paper analyzed, via a multinomial logit model, the associations between household socioeconomic characteristics and the reasons eligible households give for not entering the Food Stamp Program. Data were taken from the 1979-80 Low Income Supplemental Sample of the USDA Nationwide Food Consumption Survey. Statistical analysis revealed that households either residing in suburban areas, with employed members, or whose head is a high school graduate cited a lack of information about the program as the reason for nonparticipation more frequently than their counterparts without one of these characteristics. The advent of mad cow disease in Canada in the United States raises numerous concerns regarding consumer reaction to information in the United States. To examine the role of consumer reaction to information we examine the response of price spreads in the U.S. beef market to a Food Safety Index derived from Lexis-Nexis. Specifically, we estimate a vector error correction model to examine the long and short-run effect of news on price spreads. Our results indicate that informational shocks are fairly transient in the retail prices, but persist at the wholesale and farm level. |

Although healthy foods can be affordable, if less healthy foods are cheaper, individuals may have an economic incentive to consume a less healthful diet. Using the Quarterly Food-at-Home Price Database, we explore whether a select set of healthy foods (whole grains, dark green vegetables, orange vegetables, whole fruit, skim and 1% milk, fruit juice, and bottled water) are more expensive than less healthy alternatives. We find that not all healthy foods are more expensive than less healthy alternatives; skim and 1% milk are less expensive than whole and 2% milk and bottled water is generally less expensive than carbonated nonalcoholic drinks. Food quality has become an increasing concern in the public health arena over recent years. Food manufactures and processors hygiene performance plays a crucial part in producing safer food products. While there are inspections assessing plants' hygiene performance, there is little direct communication of performance measures to consumers. This paper uses survey data to determine consumer preferences among a set of four alternative food labels which report such plant level performance scores. How much information, as well as the format they most prefer, is compared using a range of econometric models.
