| The Charente-Maritime coast has, on its northern part, between the Charente estuary and the northern boundary of the department (Isle of Ré included), many sites which interest the oyster culture industry, especially as far as juvenile collection is concerned. The well-known centre of Fouras is one of them. To help the professionals, and for its own purposes, the Ifremer studies the periods of emission of cupped oyster larvae in order to let the oyster farmers know about the best collection times. | Des prélèvements dans le bassin de Marennes-Oléron ont permis de localiser les fortes charges de Crepidula fornicata L. principalement dans le centre du bassin (le long du banc de Charret et dans le courant d'Oléron). En ces deux points la charge fraîche cumulée a été estimée à environ 2 700 tonnes. | The expansion of shellfish culture businesses (oysters, mussels, clams...) gives way to a competition for the use of limited food resources, especially in the Marennes-Oléron basin where water circulation is slow. | Les conditions météorologiques semblaient cette année à priori favorables à la reproduction des moules. Cependant, le maturation des gonades a été très lente. Ainsi, les premières pontes, de faible importance, ont eu lieu début Avril. Plusieurs émissions tardives sont apparues fin Mai et se sont poursuivies jusqu'au début du mois de Juillet. | The evolution of microbial biomass based on chlorophyll a, pheopigments, proteins, particulate carbon and nitrogen, ATP and total viable aerobic bacterias measurements, is studied on three oyster ponds in relation with different densities of reared oysters Crassostrea gigas (Thunberg). Chlorophyll a important amounts characteristics of theses middles (13 to 100µg.1(1) are in part consumed when the density of oysters is important, comparatively ATP increase to 30µg.1(1). | L'aquaculture des huîtres est une activité traditionnelle en France depuis le moyen âge. Sur la côte atlantique, dans le bassin de Marennes Oléron, la commercialisation annuelle de C. gigas atteint environ 50 000 tonnes. Cette région bénéficie d'une infrastructure de claires ostréicoles, anciens marais salants, où les huîtres sont affinées avant commercialisation. L'huître est un produit de consommation festif dont les 3/4 se commercialisent durant les fêtes de fin d'année. A l'heure actuelle les techniques d'affinage, visant à améliorer la qualité (goût, coloration, engraissement des huîtres), sont peu fiables.
