K-casein gene polymorphisms are of major importance in the dairy industry due to their association with different quality and productive traits (i.e., milk protein). Several methods for genotyping this gene have been proposed; however, none are focused on the simultaneous discrimination of nine K-casein variants. A strategy based on PCR-RFLP was designed to characterize nine K-casein variants (A, B, C, E, F², G, H, I and J) and used to genotype three cattle populations: Gyrholando (3/8 Gyr x 5/8 Holstein), Charolais and Carora. The B variant was the most frequent in the Charolais and Carora breeds, with allelic frequencies of 0.60 and 0.59, respectively. In the Gyrholando breed, four variants were found, with the A variant being the most frequent and E and... |

The objective of this work was to evaluate the effect of somatic cell counts (SCC) in casein fractions of ultra high temperature (UHT) milk. Raw milks were categorized in SCC groups of low (200,000-320,000 cells mL-1), intermediate (380,000-560,000 cells mL-1) and high cells (600,000-800,000 cells mL-1). Five replicates of UHT milks within each SCC category were analyzed for casein fractions after 8, 30, 60, 90 and 120 days of storage through high performance liquid chromatography. SCC showed effect only on beta-casein reduction. SCC in raw milk increases the proteolysis of UHT milk, as a consequence of beta-casein degradation. |

Abstract: The objective of this work was to evaluate the chemical composition and fatty acid profile of milk from F1 Holstein/Zebu cows in different lactation periods, when receiving different levels of dietary supply in percentage of body weight. Sixty cows were evaluated, with five levels of dietary supply and three lactation periods. The levels of dietary supply had no effect on the production of milk corrected to 3.5% fat (12.25 kg per day). There was also no effect of dietary supply levels, in the different lactation periods, on contents of fat (3.34%), protein (3.41%), lactose (4.60%), total solids (12.0%), defatted dry extract (8.80%), and urinary nitrogen (14.5 mg dL-1), nor on somatic cell count (89.98 mL-1). As the dietary supply level was... |

In Hungary the introduction of quality assurance and food safety systems have achieved considerable results in the middle of the food-supply chain (i.e. in companies of food industry and trade sector), but in the ends of the chain (in agriculture and catering sector) there are still several problems. This article and our presentation wish to show a general overview on the Hungarian milk sector, to describe the present situation of the Hungarian dairy farms and try to explore and examine the main difficulties of the building-up process, installation and operation of HACCP System in the Hungarian fresh milk producing sector and, furthermore its opportunities and threats, too. We also give a short description of the Hungarian dairy sector, the main... |

The objective of the present study was to characterize the food sources, as well as the composition and quality of milk obtained from household farms of western Paraná State (Brazil) with and without technical assistance during the different seasons. For such, 24 properties were selected, 12 of which only received assistance and technical support. Four milk samples were taken (summer, autumn, winter and spring) to assess the physicochemical composition, somatic cell count and total bacterial count and feed supplied to the animals to assess the chemical composition (crude protein, ash, dry matter and neutral detergent fiber). The data were analyzed in a completely randomized design with a 2 × 4 factorial arrangement; the first factor was the presence and... |

The majority of sheep milk produced in the world is transformed into cheese. Feeding is a major factor affecting the quality of sheep milk and, therefore, of sheep cheese. Because fat is the main compound of cheese, this review gives an update on the effects of feeding and nutrition on milk fat content and deeply discusses feeding strategies aimed at increasing the levels of healthy fatty acids (FA), such as conjugated linoleic acid and omega-3 FA, in milk and cheese in the human diet. In addition, the use of alternative feed resources such as by-products, aromatic plants, and phenolic compounds in the sheep diet and their effects on milk and cheese FA composition are also discussed. Among feeding strategies, grazing and the use of supplements rich in oils... |

The effects of inactive dry yeast (Saccharomyces cerevisiae) from sugar cane were studied in 18 primiparus Saanen dairy goats (51.07±1.43) on dry matter intake and digestibility, milk production and quality. Animals were distributed in a completely randomized design during 90 days (from day 60 of milking). Diets were composed of soybean meal; soybean meal + dry yeast; or dry yeast, as protein sources, and ground corn, mineral supplement and corn silage (40%). Animals fed the dry yeast diet showed lower intake of dry matter (DM), organic matter (OM), crude protein, ether extract and neutral detergent fiber. Diets did not influence milk yield; however the milk production efficiency (kg of milk produced/kg of crude protein ingested) was better in goats fed... |

This work was realized to evaluate lactation stage, physiological state, somatic cell count (SCC) and body condition score (BCS) on production and composition of cow's milk from Gir and Guzerat breeds were studied. Ninety-eight cows were analyzed and classified according to their physiological state, lactation stage, SCC and BCS. Milk production was weighed monthly to obtain production data. Composed samples were collected in vials containing preservatives and sent to the laboratory for analysis. Data were used for statistic descriptive analysis and analysis of variance. Higher milk production in the first 60 days of lactation was observed. Fat, protein and total solids concentration increased according to the increase of days in milk; while lactose... |
