Measuring Japanese consumers’ evaluation of beef derived from cattle fed in accordance with improved food safety measures OAK

The purpose of this paper was to verify the stability of consumers’ evaluations of food safety by conducting the identical choice experiments questionnaire survey at the same site two different times. The two surveys, measuring the consumers’ evaluations of beef derived from cattle fed in accordance with improved food safety measures were conducted in January 2003 (n = 83) and March 2004 (n = 369) in Kiyota ward of Sapporo city in Hokkaido, Japan. 本稿の目的は,牛肉生産における飼料自給率向上の利点に関する消費者評価を検討することである。Best-Worst 選択質問実験を用いて牛肉生産における飼料自給率向上の利点に関する消費者の評価を測定する調査を,首都圏在住の618名を対象に2008年3月に実施した。分析の結果,回答者全体としては,「エサに対する安心感」が飼料自給率の向上で最も重視される項目であるが, 評価パターンによって回答者は3つの群に分けられることがわかった。さらに,評価パターンには,回答者の,倹約志向ならびに食の安全志向といった態度が顕著に影響することが確かめられた。The purpose of this paper was to verify consumers’ evaluations of the advantages of improving feed selfsufficiency in beef production.
