Lactic acid bacteria (LAB) are commonly used in food industries,especially for the production of fermented dairy products. During fermentation process,some dairy LAB produce exopolysaccharide(EPS),providing good mouthfeel properties to the products by modifying their textures. In general, EPS is divided into two groups based on their monosaccharide composition; homo-EPS and hetero-EPS. Using a combination of PAGE and mass spectrom etry for protein identification,we obtained evidence that a putative odorant-binding protein,designated hypothetical protein LOC517854,occurs in bovine colostrum. This protein,termed as a putative bovine colostral odorant-binding protein (bcOBP), consists of 172 AA residues,including a putative 16-AA signal peptide. The theoreticalis oelectric point value and molecular mass of the full-length sequence of bcOBP were calculated to be 4.57 and 19604.18,respectively. Human and great ape milks contain a diverse array of milk oligosaccharides, but little is known about the milk oligosaccharides of other primates, and how they differ among taxa. N-acetylglucosaminyltransferase I (GnT I; EC 2.4.1.101), which catalyzes the first step in the conversion of oligomannose to complex or hybrid N-glycans of glycoproteins, was found in media cultured with bovine oviduct epithelial cells (BOEC) obtained from non-pregnant cows during the follicular phase. Combined treatment with specific hormones increased GnT I release from BOEC. Luteinizing hormone (LH; 10 ng/ml) alone slightly, but together with 17β-estradiol (E2; 1 ng/ml), synergistically increased GnT I activity. 生乳中の酵母の動態を明らかにすることを目的として,帯広畜産大学と近郊の酪農家3戸で飼養している健康なホルスタイン種乳牛(体細胞数1×105cfu/ml以下)の乳頭表皮,分房乳,バルク乳およびローリー乳中の酵母数の月別変動について調べた.各試料は1999年7月から2000年6月までの1年間,それぞれ毎月1回ずつ採取した.生乳中の酵母の検出率と平均酵母数はそれぞれ順に,乳頭表皮では70.1%,52cfu/cm2,分房乳は47.9%,1.8cfu/ml,バルク乳は100%,28cfu/mlおよびローリー乳では100%,66cfu/mlであった.乳頭表皮および各種類の生乳中において90%以上を占める酵母数の水準は,乳頭表皮が150cfu/cm2以下(90.8%),分房乳が10cfu/ml以下(94.4%),バルク乳が100cfu/ml以下(97.8%)およびローリー乳が150cfu/ml以下(91.7%)であると考えられた.生乳中の酵母数は夏から秋期に高く,冬から春期に低くなる季節的な変動傾向が認められた.健康な乳牛の分房乳中では,主な乳房炎起因菌(C. parapsilosis, C. lambica, C. catenulata, C. rugosa)は夏期に検出されたが,冬から春期には検出されなかった. The activity of α3-D-mannoside-β-1,2-N-acetylglucosaminyltransferase I (GnT I; EC 2.4.1.101), which catalyzes the first step in the conversion of oligomannose to complex or hybrid N-glycans of glycoproteins, was detected in bovine follicular fluid (bFF). The GnT I activity in bFF had a pH optimum of 5.8 and an absolute requirement for either Co2+, Mn2+, or Mg2+, the activity being stimulated by these cations in the above order. The apparent Km value for α1-3α1-6 mannopentaose of GnT I in bFF was 2.17 mM. Twenty-two strains of Saccharomyces cerevisiae isolated from tape-mash for the production of brem, a traditional rice wine from Bali, Indonesia, were divided into three groups (I, II, and III) based on the sequences of the rDNA spacer region and SUC2 gene. DNA analyses suggested that the seventeen strains in groups II and III were taxonomically closer to baking strains than the five strains in group I. These differences were reflected in their leavening ability in dough with and without addition of 5% sucrose, and their α-glucosidase activity, although most of the strains did not leaven dough with addition of 30% sucrose. Bactrian camel milk and colostrum are commonly used as foods in Mongolia, whose people believe that these products promote human health. It has been hypothesized that milk oligosaccharides are biologically significant components of human milk, acting as receptor analogs that inhibit the attachment of pathogenic microorganisms to the colonic mucosa, and as prebiotics, which stimulate the growth of bifidobacteria within the infant colon.
