I årevis har det været diskuteret, hvorvidt økologisk producerede fødevarer er sundere end konventionelle. Indtil videre er der ikke noget, der underbygger, at de er det. Ofte måles der på indholdet i selve fødevarerne, men det er en almindelig misforståelse, at man sådan lige kan måle sig frem til sundhedsværdien af en fødevare.

BACKGROUND: The demand for organic food products has increased during the last decades due to their probable health effects, among others. A higher content of secondary metabolites such as carotenoids in organic food products has been claimed, though not documented, to contribute to increased health effects of organic foods. The aim was to study the impact of organic and conventional agricultural systems on the content of carotenoids in carrots and human diets. In addition, a human cross-over study was performed, measuring the plasma status of carotenoids in humans consuming diets made from crops from these agricultural systems. Trace elements, bioactive secondary metabolites and vitamins are among the most important quality parameters in plants. Yet, very little information is available on their content, bioavailability and health effects in organically grown plant food products. Consumers buy organic food because they believe in the high quality of the product. Furthermore, the EU legal regulatory framework for organic food and farming defines high quality of the products as an important goal of production. A major challenge is the need to define food quality concepts andmethods for determination. A background is described which allows embedding of the quality definitions as well as evaluation methods into a conceptual framework connected to the vision and mission of organic agriculture and food production. Rats show differences in some biomarkers of health when eating diets based on ingredients produced with three different cultivation strategies Organic Eprints

BACKGROUND: The aim of this study was to identify health-related biomarkers affected by different growth conditions of plant foods. Rats were fed balanced diets composed of vegetables and rapeseed oil from three different cultivation systems (‘LIminusP’, low fertiliser input, without pesticides; ‘LIplusP’, low fertiliser input, with pesticides; and ‘HIplusP’, high fertiliser input, with pesticides) chosen to cover a broad range of management options, rather than representing actual food production systems. RESULTS: Rats fed LIminusP and LIplusP had a higher serum IgG concentration compared to rats fed HIplusP and 14% less adipose tissue.
