This paper describes an exploratory study carried out to determine critical control points and possible risks in hatcheries and broiler farms. The study was based in the identification of the potential hazards existing in broiler production, from the hatchery to the broiler farm, identifying critical control points and defining critical limits. ABSTRACT The present study had the objective of analysing the impact of the use of environmental enrichment (music and light stimuli), broiler sex, and age in broiler chickens’ weight during growth. The observational study was carried out on a commercial farm. The environmental enrichment consisted of broilers’ stimulation by sound and light, and a house was kept without stimulus (control). This study was conducted to determine the effect of the air temperature variation on the mean surface temperature (MST) of 7- to 35-day-old broiler chickens using infrared thermometry to estimate MST, and to study surface temperature variation of the wings, head, legs, back and comb as affected by air temperature and broiler age. One hundred Cobb® broilers were used in the experiment.
