Hazards in non-pasteurized milk on retail sale in Brazil: prevalence of Salmonella spp, Listeria monocytogenes and chemical residues BJM

Fluctuations in the Brazilian milk market force small milk producers to find temporary trade alternatives, which include selling raw milk to people who prefer this type of milk rather than heat-processed milk. Considering the importance of these small milk producers to the market and the well-known health risks associated to consumption of raw milk, this study evaluated the microbiological quality and the presence of Listeria monocytogenes, Salmonella spp., chlorine, antimicrobials and insecticides (organophosphates and carbamates) in raw milk produced in 210 small and medium farms located in four important milk-producing Brazilian states (Paraná, São Paulo, Minas Gerais and Rio Grande do Sul). Assessment of the efficiency of SimPlate™ total plate count color indicator (TPC CI) to quantify mesophilic aerobic microorganisms in pasteurized milk BJM

The SimPlate™ TPC CI system is a rapid method to count mesophilic aerobic microorganisms (MAM) in foods, based on the use of resazurine to indicate bacterial growth. Its efficiency in pasteurized milk was evaluated using 142 pasteurized milk samples (38 type A, 43 type B and 61 type C) collected in Londrina, PR. The standard plating method, using Plate Count Agar (PCA) was used for comparison. The plates of both systems were incubated at 35ºC and read after 24h and 48h. The occurrence of false-positive and false-negative wells and the predominant microorganisms in them were also evaluated. The results were compared by simple correlation and mean variance analyses. Evaluation of Petrifilm™ EC and HS for total coliforms and Escherichia coli enumeration in water BJM

Petrifilm™ EC and HS were compared to the MPN method to determine their efficacy to enumerate total coliforms and E. coli in 145 samples of water (76 water in natura, 69 drinking water). For water in natura, Petrifilm™ HS and EC showed good correlation with MPN method. In chlorinated water (< 20 col/100 mL and negatives) the agreement was low. For E.coli enumeration, Petrifilm™ EC showed a good correlation with MPN method. The results indicated that Petrifilm™ EC and HS are accurate to enumerate coliforms and E. coli in water when the expected counts are higher than 20/100 mL.

High levels of microbial contamination, commonly found in animal origin foods and food processing environments, are able to hinder the growth of pathogens in these products and interfere in the results of laboratory analyses for detection of these pathogens. Use of Readycult™ - LMX for enumeration of total coliforms and Escherichia coli in milk BJM

Readycult™ - LMX is a rapid method to test for the presence of total coliform bacteria and Escherichia coli in water, giving results in 24h. It is based on reactions of specific microbial enzymes or indicator nutrients of the medium. The goal of this paper was to study the use of Readycult™ - LMX to detect total coliform and E. coli in milk. The microbiological quality of beef and meat products is strongly influenced by the conditions of hygiene prevailing during their production and handling. Without proper hygienic control, the environment in slaughterhouses and butcher shops can act as an important source of microbiological contamination. Evidências que o leite produzido e consumido no Brasil nem sempre apresenta a qualidade desejada têm gerado a discussão e desenvolvimento de novas políticas de incentivo à produção leiteira, resultando no desenvolvimento do Programa Nacional de Melhoria da Qualidade do Leite. A presença de resíduos de antibióticos em leite pode ter efeitos adversos para a saúde pública e para a indústria de laticínios. O objetivo desse estudo foi verificar a presença de resíduos de antibióticos pelo kit Charm-test™ (principalmente beta-lactâmicos e sulfonamidas) em 210 amostras de leite cru, coletadas em quatro regiões produtoras de leite no Brasil: 47 em Viçosa - MG, 50 em Pelotas - RS, 63 em Londrina PR e 50 em Botucatu - SP. Spores are resistant to thermal conditions and your germination reduces milk shelf-life because the aerobic bacteria that are sporulated produce proteases and lipases. 2,3,5-triphenyltetrazolium chloride (TTC) is a dye largely used for enumeration of microbial colonies in solid culture media, being a key component of the dry rehydratable film system used for microbiological analysis of food. This dye is colorless in the oxidized form and red when reduced by microorganisms, due to formation of formazan. In this study, TTC was added to Plate Count Agar (PCA) for enumeration of microorganisms in thirty four pasteurized milk samples, with the aim to verify the frequency of microorganisms that are unable to reduce TTC.
