Uma proposta em estudo para minimizar as perdas pós-colheita, é o uso de revestimentos derivados da fécula de mandioca. Frutos de pimentão (Capsicum annuum L.) cultivar Magali, foram mergulhados (1 minuto) em suspensões a 1 e 3% de fécula geleificada, secos naturalmente ao ar e armazenados em condições ambientais onde a temperatura média do período variou de 20,2-21,8°C. O delineamento experimental foi inteiramente casualizado com 3 tratamentos, 6 repetições e 5 frutos por parcela. As análises de controle (perda de massa e alteração da coloração), foram feitas a cada dois dias por um período de 10 dias. Os frutos com película a 3%, apresentaram inibição no desenvolvimento da coloração vermelha; porém não houve efeito sobre a perda de massa. |

In this work, the effect of lactic acid and UV irradiation on the physicochemical and structural characteristics of cassava and corn starches was evaluated. Only the modified cassava starch presented baking expansion capacity. From RVA, reduction of viscosity values, greater internal stability and none set back for modified cassava starch were observed. Modified corn starch did not show any peak viscosity. There were no significant differences in DSC thermal properties of treated and native starches. Amylopectin and amylose molecules from both the modified starches displayed some degradation. Molecular weight of cassava amylopectin was mostly preserved, whereas corn amylopectin was evenly attacked through the granule. Nevertheless, the B long branched... |

ABSTRACT In Brazil, ethanol is obtained by fermentat of sugar cane juice using Saccharomyces cerevisiae. The cane juice extraction generates the bagasse that has been used for obtaining generation biofuel. However, the sugarcane bagasse has 30% pentose that cannot be fermented to ethanol by S. cerevisiae. Thus the aim of this study was to isolate a yeast able to ferment xylose to ethanol. Samples of cane juice and flowers were used for the isolation of 165 strains that were then screened for ethanol production using plate testing. ABSTRACT Cassava has been widely used for animal and human nutrition. It has also been demonstrated to have antineoplastic and anthelmintic properties. Toxicity due to cassava consumption has been reported in ruminants and laboratory animals; therefore, this study aimed to investigate the toxic effects of acetone cyanohydrin, a metabolite of linamarin that is present in cassava, in Wistar rats. Six groups of five animals each were used to evaluate the toxic effects of acetone cyanohydrin administered at 25 (G1), 50 (G2), 75 (G3), 100 (G4) and 125 (G5) µmol/kg as a single oral dose.
