Consumers' beliefs in the benefits of reducing fat intakes, especially saturated fat, and of increasing calcium intake from such foods as dairy products, depend upon the acquired information related to diet and health. This study develops new health information measures from different sources. The monthly information indexes, constructed for 1980-93, show that the amount of consumer information related to fat and cholesterol in circulation reached the highest levels during 1989-90. The results from an empirical application show that these new indexes of consumer health information about fats and cholesterol could explain the changing patterns of consumer choice for whole milk vs. lower fat milk in the United States. |

Since its economic reform, China has changed significantly as it makes its transition from a centrally-planned to a consumer-oriented economy and thus has gradually increased household income and changed consumption patterns in urban China. This study attempts to provide an in-depth understanding of heterogeneous consumer patterns in urban China by developing a multi-stage censored demand system using household data. This paper reports results from a pilot U.S. national telephone survey on genetically modified foods (vegetable oil, cornflake cereal, and salmon). The survey featured contingent valuation in which respondents chose between the GM and non-GM alternatives. The binary and multinomial logit models yield estimated willingness to pay to avoid the GM alternatives. Perceived risk of GM food is an important determinant of GM choice along with the price. Respondents are willing to pay 41.2%, 31.4%, 40.9%, and 52.5% of the base prices to avoid GM vegetable oil, GM cornflakes, GM-fed salmon, and GM salmon, respectively. |

We present in this study an agricultural household model that describes the joint production-consumption decision making of Chinese rural households under imperfect market. We conclude that the marginal value of a food product consumed is the sale price if there is a net sale for this food item; it is the purchase price if there is a net purchase; and it is the shadow price if there is no purchase or sale. A preliminary empirical food estimation analysis confirms that it provides superior demand estimates to use these "effective prices" rather than traditionally used purchase prices or weighted average of sale and purchase prices in rural food demand analysis in less developed countries (LDCs). |

In 2001, Taiwan enacted a law for genetically modified food (GM foods) labeling. Beginning January 1st 2003, food containing more than 5% of GM ingredients must be labeled. Taiwan imports most of its soybeans from the United States. In order to assess the effects of the new policy, a telephone survey was conducted in 2002. A total of 257 interviews were completed. A typology of consumers' attitudes towards GM foods is constructed from the use of a multiple correspondence analysis and a classification method. Four profiles are identified: proponents, 52%, moderate opponents, 32.5%, extreme opponents, 12.5%, and those with no opinion, 5.5%. |

Scanner data for breakfast cereals are used to estimate demand elasticities for six supermarket stores in two distinct socio-economic areas. Three stores are in low-income locations and three are in high-income locations. A time series cross-section model is estimated for five product categories across six cross sections over forty-two weeks. Results show lower-income shoppers to have more elastic demands for four of the five product categories: private label cold cereals, the top ten brands of cold cereals, all other brands of cold cereals, and hot cereals. Price is not statistically significant for a fifth product category, snack cereals. |

This paper presents the results of experimental auctions of the orange juice processed with the pulsed electric field (PEF) technology. A series of experimental auctions are conducted to elicit consumers' willingness to pay (WTP) for the PEF orange juice along with WTP for three other types of orange juice: unprocessed (fresh), thermally processed not-from-concentrate, and thermally processed from-concentrate orange juice. We adopt the second-price sealed-bid auction. With this auction method, the highest bidder claims the product at the price equal to the second highest bid.
