I Danmark ses i øjeblikket et boom i efterspørgslen efter økologiske fødevarer, der bringer den op på det højeste niveau hidtil. Der kan være mange årsager til denne stigning – eksempelvis menes generelle indkomstløft at være en væsentlig faktor. Igangværende forskning viser desuden, at forbrugerne køber økologiske varer, fordi de forbinder økologi med en lang række positive egenskaber som ren natur, dyrevelfærd, troværdighed, friskhed, kvalitet og sundhed. Men er der også sammenhæng mellem forbrug af økologiske varer og en ernæringsrigtig kost? Der foreligger ikke entydige forskningsresultater, der bekræfter, at økologiske varianter af den samme vare er et sundere valg. The present study investigates the relationships between consumer categorization of organic versus non-organic food products, consumers' underlying perceptions of organic food, and their propensity to consume organic foods. A choice experiment is used to test these relations in a case study involving consumer preferences for attributes relating to milk. First and foremost, we find a strong link between how consumers categorize food and their organic profile. Second, we find that knowledge concerning a claim stating that milk from grazing cows is healthier, serves as a way to categorize consumers according to their organic profile. I DETTE STUDIE undersøges, hvordan forbrugerne opfatter fødevarer. Mere præcist fokuserer undersøgelsen på, om en forbruger først og fremmest tænker på, hvilken produktgruppe en fødevare tilhører (produktfokus), eller om det er vigtigst, om en fødevare er økologisk eller konventionelt produceret (øko-fokus). Vores resultater indikerer, at forbrugernes måde at opdele fødevarer på hænger tæt sammen med deres holdninger til og forbrug af økologiske fødevarer. The complexity of values related to organic food systems is normally difficult to ascertain, understand and act upon for both producers and consumers, as well as for other agents. In this paper we have suggested MCA as a method that may help in coping with this complexity. Furthermore, we have pointed to the importance of addressing the challenge of motivation when designing such an MCA tool. Several studies have shown that consumers with a high organic consumption often have dietary habits that a more in line with the official recommendations of eating more fruit, vegetables, and less red meat. This paper takes a novel approach by investigating whether changes in consumption patterns are also related: To what extent is an increase in organic consumption accompanied by improvements in dietary habits? We also investigate what motivates the consumers to change their habits and in what order the changes occur. Many consumers had relatively healthy dietary habits before the increase in purchases of organics. This study investigates the relationship between how consumers prefer to group different varieties of organic and conventional products and their preferences for organic food. Using a web-based questionnaire, 849 Danish respondents were asked to group the content of a virtual basket of organic and non-organic fruit and vegetables into two smaller baskets. Almost half of the consumers placed the products according to whether they were organic or not. In order to sustain consumers’ support and trust in organics in the future, it is essential to understand what motivates consumers to pay extra for organic products. Only then is it possible to design effective information campaigns and to supply products which successfully meet consumers’ expectations. The purpose of this study is to elicit the relative importance that consumers place on various organic attributes and to estimate the monetary significance of these. As an integrated part of the study, consumers’ susceptibility to new information and the effect of information on the willingness to pay (WTP) for different attributes are investigated. MultiTrust projektet har til formål at udvikle metoder til vurdering og kommunikation vedrørende de effekter som økologiske fødevaresystemer har på miljø, menneske og samfund. Hensigten hermed er dels at gøre de økologiske producenter bedre i stand til at udvikle økologien i overensstemmelse med de økologiske principper og i synergi med samfundets målsætninger, dels at gøre det lettere for forbrugere, borgere og politikere at sætte sig ind i og bedømme de forskelligartede bidrag som økologiske fødevaresystemer tilbyder. Får økologiske forbrugere oftere 6 om dagen? Ja! Analysen af nye forbrugsdata fra GfK ConsumerScan indikerer, at husholdninger med et højt økologiforbrug spiser relativt meget frugt og grønt, men lidt kød. Selvom der ofte betales en merpris for økologiske varianter, viser undersøgelsen samtidig, at den økologiske forbruger ikke bruger flere penge på mad end andre. For alle forbrugergrupper står supermarkederne for det største salg af økologiske varer, men derudover adskiller den økologiske forbruger sig ved at købe flere varer over internettet og i specialbutikker.
