Sixty samples of chilled chicken carcasses submitted (30) and not submitted (30) to Brazilian inspection services were analyzed to investigate if inspected and non-inspected chilled carcasses represented different food safety risks in the region of Viçosa, MG, Brazil. The mean counts of indicator microorganisms (mesophilic aerobes, Enterobacteriaceae, total coliforms and Escherichia coli) of samples belonging to the inspected and non-inspected lots did not present significant differences (P>0.05). Also, no significant differences (P>0.05) were observed for the numbers of Salmonella spp. and E. coli (higher than 2log cfu g-1) between samples submitted or not to inspection.
