The Taste for Variety: A Hedonic Analysis AgEcon

Based on the model of consumers' variety-seeking behavior introduced by Anderson et al. (1992), this paper derives a hedonic price function for a households' consumption bundle. The price a consumer pays for her consumption bundle reflects the values of the underlying attributes of goods purchased but also accounts for any preference for variety that she might have. The empirical analysis is conducted for 3,240 German households and their expenditure on 182 different soft drinks over a six-month period. We find that consumers have a preference for variety in food consumption, ceteris paribus. Comparing Predictors of Diet Quality in Canada Over Time Under Consideration of Altering Food Guides AgEcon

Latest data on the diet of Canadians from the Canadian Community Health Survey reveals that the diet quality of Canadians needs improvement. Within this paper predictors of diet quality in Canada are identified based on two cross-sectional data sets from the Canadian Food Expenditure Survey. To measure diet quality, the Canadian Healthy Food Diversity (CanHFD)-Index is developed which is based on Food Guide recommendations. Moreover, this paper considers that the Food Guide between survey years has changed when analyzing diet quality. Consumption of food away from home (FAFH) is widely believed to be a contributing factor to the current obesity crisis and other diet related problems in North America. Although FAFH expenditure represents a lower proportion of food expenditure in Canada than in the United States (24% versus 50%) it is still a significant part of Canadian diets. The Canadian Heart and Stroke Foundation has developed a third party accreditation program to identify healthy food items in grocery stores and more recently, restaurants, called the Health Check™ program. A HAZARD ANALYSIS OF CONSUMERS’ SWITCHING BEHAVIOUR IN GERMAN FOOD RETAILING FOR DAIRY PRODUCTS AgEcon

German food retailing is characterized by fierce competition among retail chains for consumer shopping. This paper considers the switching behaviour using data of white dairy product purchases. The empirical investigation uses a survival analysis approach, in particular hazard analysis. The results extend the knowledge of shopping behaviour by providing a new set of explaining variables and the importance of the first store, defined as store with the major share of household budget, becomes apparent. On average, households buy dairy products 42 times per year. Thereof 58 % are retail chain switches and in 41 % of all cases the households remain at the previously visited retail chain. Research on food diversity is interdisciplinary in nature, and is highly relevant for different research fields. Eating a variety of foods has been linked to the nutritional well-being of the household. Livestock industries are significantly affected by changes in consumer behaviour. In order to add value to meat and livestock production, many firms and farms are supporting the development of new products – these products can differ by credence attribute, by degree of processing and by marketing strategies. The literature suggests that one of the most important determinants of success in product innovation is an understanding of the market the product is introduced into. In this report consumer preferences for meat products, by animal species including minor meats, and by type of processing are examined. Heterogeneous Demand for Food Diversity: A Quantile Regression Analysis AgEcon

Poverty and inequality studies frequently use the quantile regression approach to provide results on the impact of determinants at different points of the distribution of a dependent variable. To innovate diversity research this paper uses quantile regressions to identify determinants at different points of the food diversity distribution. Regional and household level differences in demand for food diversity are analysed based on a pooled sample of Canadian data of the Family Food Expenditure Surveys of Statistics Canada. According to Ando and Modigliani (1957), consumers pass different stages of a lifecycle with different impact on demand. The criticism that the life-cycle theory neglects generational effects and concentrates on ageing effects only has led to the application of the cohort analysis which decomposes not only age, but also period and cohort effects. Following these ideas, this paper presents results of a cohort analysis on food-at-home and away-from-home consumption covering 25 years of German consumption data. Spread of retailer food quality standards: An international perspective AgEcon

Privately initiated food quality standards are currently important elements in the marketing of food and agricultural products. At the same time, they stand in the centre of a discussion about potential negative effects on small farmers and farmers in developing countries. This study aims at analysing the adoption of two private food standards, BRC Technical Food Standard and GlobalGAP, at an aggregated cross-country level. The results of the econometric analysis reveal some (potential) barriers for developing countries to access this type of organisational innovation. Certificates seem to be issued more probably in larger and wealthier countries, countries with a better institutional quality, better infrastructural conditions and in former UK colonies.
