Development and optimization of projects for agricultural machinery involve the analysis of stress and strain. Moiré photomechanical techniques provide a complete displacement field of the specimen under test, and can aid in understanding the mechanical behavior of parts with complex geometry. Hybrid methods combine fringe patterns of displacement with distribution maps of stress and strain through concepts of the theory of elasticity. Abstract The classification and selection of agricultural products are very important to assure post-harvest quality processes. However, most of physical and chemical analyses are destructive. It means those products turn useless after these analyses. Moisture is one of the most important parameters to assure the storage quality and as well to facilitate product processing. This research offers an alternative method to determine that parameter through an indirect and non-destructive way, using the image analysis based on the Biospeckle phenomenon. Vegetable quality is frequently referred to size, shape, mass, firmness, color and bruises from which fruits can be classified and sorted. However, technological by small and middle producers implementation to assess this quality is unfeasible, due to high costs of software, equipment as well as operational costs. Based on these considerations, the proposal of this research is to evaluate a new open software that enables the classification system by recognizing fruit shape, volume, color and possibly bruises at a unique glance.
