| The work had the intention of investigating the effect of the use of alternative feeds as part replacers in diet-formulating, evaluating the characteristic physicochemical alterations and centesimal composition of the free-range chicken. | ABSTRACT The purpose was to evaluate the effects of gender and of different genotypes of chickens on the physicochemical parameters and centesimal composition, related to the quality of meat. | O objetivo deste trabalho foi avaliar os efeitos do fornecimento de diferentes níveis de glicerina na alimentação sobre a qualidade da carne de suínos em terminação. Foram utilizados 30 machos castrados e 30 fêmeas que apresentaram peso inicial de 79,3±4,0kg. Utilizou-se delineamento em blocos casualizados (peso inicial) em esquema fatorial 2 × 4 + 2, sendo duas categorias sexuais (macho castrado e fêmea), quatro níveis de glicerina bruta (50, 100, 150 e 200g/kg) e dois grupos controle (macho castrado e fêmea alimentados com dieta sem glicerina), totalizando dez tratamentos com seis repetições e a unidade experimental representada por um animal. | The aim of this work was to evaluate the effects of adding different levels of glycerin in the feeding on the lipid profile and cholesterol of the meat of finishing pigs. The experiment was arranged in a completely randomized design (CRD) with factorial 5x2, being five levels of glycerin in the diet and two genders. Sixty (60) swine of the Topigs genetics (30 barrows and 30 gilts) were used; they presented initial average weight of 79.3+4.0kg and were finished with the weight of 106.2+4.5kg. | RESUMO Objetivou-se avaliar o perfil lipídico da carne de frangos de diferentes genótipos. O delineamento foi inteiramente ao acaso (DIC), disposto em esquema fatorial (5x2), sendo cinco genótipos (New Hampshire ˗ NHS; Gigante Negra de Jersey ˗ GNJ; Índio Gigante ˗ IG; cruzamento entre as raças IG e NHS ˗ IG x NHS; e entre as raças IG e GNJ ˗ IG x GNJ) e dois sexos, com cinco repetições, sendo cada uma representada por três aves, totalizando 150 aves, abatidas aos 105 dias. | RESUMO Objetivou-se, com este estudo, verificar a influência da suplementação com diferentes associações entre minerais orgânicos sobre o desempenho e as características de carcaça, bem como avaliar sua viabilidade econômica, para suínos em terminação. Foram utilizados 88 machos castrados, divididos entre quatro tratamentos: controle com dieta basal e suplementação com CrFe, MgSe e CrFeMgSe, durante os 28 dias que antecederam o abate. | Neste trabalho, foram avaliadas as características físico-químicas e de composição centesimal da carne de frangos machos de três linhagens utilizadas para criação semi-intensiva: Redbro Cou Nu - Vermelho de Pescoço Pelado (Pescoço Pelado); Redbro Plumé - Vermelho de Pescoço Emplumado (Pesadão) e Gris Barre Plumé (Carijó). Foram analisadas diferenças em relação à linhagem e à idade de abate (70, 85 e 110 dias). Na carne do peito, não foi verificado efeito de linhagem sobre os parâmetros de cor (L*, a* e b*) e pH final. | ABSTRACT The present study aimed to evaluate the occurrence of polymorphisms in Diacylglycerol acyltransferase (DGTA-1 and 2), Fatty acid synthase (FASN), Stearoyl-CoA desaturase (SCD) genes and the Thioesterase domain of FASN (TE-FASN) gene that may be related to the lipid profile. | This survey was carried out in slaughter plants in the southern of the Espírito Santo State in order to study the causes and the percentages of liver condemnation during post mortem examination from 2008 to 2010. The main reasons for the condemnation of cattle livers in routine meat inspection of the State Inspection Service were fasciolosis (62.2%), telangiectatic (12.2%), bleeding (5.9%), abscess (5.2%), cysticercosis (4.0%), adherence (3.7%), infection (1.9%) and tuberculosis (1.1%). The hepatic fascioliasis was responsible for most of the lover condemnations, constituting a major challenge to livestock health in the south of the Espírito Santo. |
