This study was conducted to evaluate the decomposition kinetics of gaseous ozone in peanut grains. This evaluation was made with 1-kg peanut samples, moisture contents being 7.1 and 10.5% wet basis (w.b.), placed in 3-liter glass containers. The peanut grains were ozonated at the concentration of 450 µg L-1, at 25 and 35 ºC, with gas flow rates of 1.0 and 3.0 L min-1. Time of saturation was determined by quantifying the residual concentration of ozone after the gas passed through the grains to constant mass. This study was done to evaluate the quality of crude oil from soybeans stored under different conditions. The grains were harvested at 18% (w.b.) moisture content (m.c.), and after drying to 11.2, 12.8 and 14.8% they were stored at 20, 30 or 40 ºC. Changes in free fatty acid (FFA) content, peroxide, iodine and photometric color index of the extracted oil were determined at 45-day intervals for 180-day storage. In general, oil FFA content increased in all the samples, except in grains at 11.2% m.c. and stored at 20 ºC. The peroxide and photometric color index increased significantly, independently of storage conditions; however, the increase was more accentuated in oil extracted of stored grains at high m.c. and temperature. ABSTRACT The fungistatic activity, especially during storage, can lead to rapid deterioration in the nutritional quality of grains, and reduce their use and disposal in industrial process due to contamination with toxins (aflatoxins and others). Among the technologies identified as promising in controlling these microorganisms, there is ozonation. Objetivou-se, com este estudo, avaliar a qualidade dos grãos de soja armazenados em diferentes condições. Grãos de soja foram colhidos com aproximadamente 18,0% b.u. de teor de água e secados até 11,2, 12,8 e 14,8% b.u. Para que os teores de água fossem mantidos, a soja foi armazenada nas seguintes condições de temperatura e umidade relativa para 11,2%: 20 ºC e 61,7%; 30 ºC e 67,9%; 40 ºC e 69,4%; para 12,8%: 20 ºC e 73,7%; 30 ºC e 76,7%; 40 ºC e 80,8%; e para 14,8%: 20 ºC e 82,7%; 30 ºC e 83,9%; 40 ºC e 85,3%. Avaliar a qualidade da farinha obtida de grãos de trigo fumigados com atmosfera sintética (21% de CO2) associada a níveis reduzidos de fosfina (0,25, 0,50 e 0,75 g m-3) foi o que se objetivou através deste trabalho. Para posterior comparação dos resultados, realizaram-se dois tratamentos com ar ambiente associado às dosagens de zero e 1,0 g m-3 PH3, em três períodos de exposição (24, 72 e 120 h) e temperatura de 29 ºC e 60% de umidade relativa. A análise dos resultados permitiu concluir-se que, em geral, os tratamentos não influenciaram na qualidade da farinha para panificação obtida do trigo fumigado com fosfina associada à atmosfera sintética (21% de CO2) e ao ar ambiente. |
