The results of analysis on Lithuanian organic dairy supply chain considering the changes in raw milk production in farms, raw milk processing into dairy products and their realization lead to the conclusion about a considerable potential for the growth of dairy products market. Larger amounts of organic raw milk could be achieved by improving its purchase process; the analysis shows existence of quite a large “free” amount of organic raw milk that is used as conventional milk. A wider range and more active application of promotional measures could encourage dairy enterprises to use better available organic raw milk reserves. After direct sales in Lithuania were activated, changes in consumers’ attitudes towards organic food products were researched. In November 2010 was carried out a survey of 502 Vilnius residents aiming to find out the key factors of the consumption of organic products. The results prove the increasing consumers’ interest in direct sales of organic food, greater trust in the quality of organic products bought in farmers’ markets.
