| Beekeeping is an activity of great socioeconomic importance in Mexico, since 80% of beekeepers are resource-poor farmers; it is among the top three of the livestock subsector and is a source of foreign exchange activity, over the 80% of the production from 59.00 tons approximately, is exported. Mexican Honey is widely known for its high quality, however, due to improper use of certain medications such as antibiotics and sulfa drugs, used to control bee diseases, may become contaminated resulting in quality problems that limit international marketing, leading to the rejection of shipments of honey. | Chicozapote ( ) is one of the fruit species that at the moment a great potential has, as much commercial as economic, nevertheless, it is a fruit that quickly deteriorates after the harvest taking place diverse biochemical reactions that take to the nondesirable softening, darkening and other aspects, with the consequent loss of the quality of the fruit, thus diminishing its acceptability, and reducing its life utility.
