Abstract: Colletotrichum is considered one of the fungal genera with the greatest diversity of species of phytopathogenic fungi and with a wide range of hosts including tropical fruits. In this study, the concentration of chitosan applied was a key factor in the in vitro inhibition of the three Colletotrichum isolates with the most sensitive being the one from banana. Germination was the development stage most affected by the application of this polymer. At the end of 10 days of storage, control of anthracnose in soursop, mango and banana fruit was considerable with the application of 1 % chitosan, with 80 to 100 % inhibition. Abstract Ultrasonic nebulization was used as a novel method of chitosan (CH) and acidic electrolyzed water (AEW) application on table eggs; effects on preservation, quality and antimicrobial properties were investigated. The effect of the application of CH and AEW alone or in combination on eggs quality was evaluated in terms of weight loss, shell thickness, yolk colour, Haugh units and shell strength. Additionally, the application of CH and AEW as antimicrobial agent was investigated in order to evaluate their efficacy against Salmonella enteritidis and Escherichia coli (ATCC 25922). Abstract Electrolyzed oxidizing water is an eco-friendly emerging technology considered as a novel broad-spectrum sanitizer. The efficacy of electrolyzed oxidizing water against Colletotrichum gloeosporioides, Fusarium oxysporum, and Penicillium italicum at different concentrations of free chlorine (0.5, 1, 6, 12, and 30 ppm) was evaluated. The results showed that at concentrations of 6, 12, and 30 ppm of free chlorine the mycelial growth, sporulation and germination process were totally inhibited in the strains tested. The inoculated fruit application of treatments by applying 30 ppm of free chlorine presented the best results for fungus control on artificially inoculated banana, papaya, and Persian lime fruits.
