Changes in consumer demand have led to a prolonged decline in per capita consumption of sweet potatoes, both fresh and processed form. With a product line of various container sizes and styles, processors may respond to changes by altering product line composition to enhance sales. Changes in quantity of individual products were contrasted to changes in nominal and real prices. Quantities were not consistently related to real prices in an inverse manner, though recent increases in total production of canned sweet potatoes have occurred while real price has decreased. |

Small- and medium-sized enterprises handling fruits and vegetables are disadvantaged by increasing concentration within the production-to-retailer chain. Retail grocer chains have become larger partly in response to the entry of mass merchandisers into food retailing. Shipper firms are expanding to provide the length of season and broad product lines expected by large retailers. The development of electronic hardware and software designed to enhance customer service and reduce logistics costs is expensive and, some argue, difficult to implement. Research on impacts on and responses by produce supply-chain wholesale and distribution firms is reviewed as a basis to understand the future of these and similar firms. |

Information on cultural practices, machinery complements, etc. was obtained from a total of 48 commercial growers. Interviews were confined to growers with at least one acre of a particular vegetable crop. Individual acreage of growers interviewed ranged from one for some vegetable crops to several hundred in the case of sweet potatoes. Cost budgets are reported for 21 vegetable crops, with a total of 39 combinations of crop, machinery size, and market channel. |

As the result of highly visible events that involve food safety (some involving oyster consumption), HACCP programs have been developed to help assure safety. A protocol for seafood products, developed cooperatively by regulators and industry, is in place. The cost of such programs has not been documented. This research used the case-study approach to identify alternative HACCP systems and to estimate the implementation and operating costs of those systems in the oyster-processing industry. |

Market channel alternatives that include garden centers, landscapers, mass merchandisers, and rewholesalers have contributed to the growth of ornamental crops sales in the United States. The impact of growers’ business characteristics on shares of sales to these channels by firm size was estimated using the two-limit Tobit model. Important explanatory variables were regions of the United States, sales of plant groups, kinds of contract sales, and channel diversity. There were important differences in behavior by grower size. Overall, the results indicate a stronger than expected role for the rewholesaler channel as a preferred channel for ornamental plant sales. |

Supply-Chain Management (SCM) reduces time requirements and costs from supply chains to improve profitability and/or competitiveness. These savings are possible through conceptual advances and increasing use of powerful computer hardware and software. The SCM concept is defined, and some considerations of its application in the produce area are discussed. Most applications and benefits have resulted from alliances between large retailers and large packaged-goods vendors. Third-party logistics (3PL) companies offer an alternative opportunity for medium and smaller companies to capture SCM gains. |

Trade is a venue for economic development and diversification. U.S. concerns focus on exports. However, imports of counter-seasonal produce items stimulate port activity. At ports used for these products, a marketing infrastructure develops that can be useful to the domestic produce industry. Most imported produce enters at Miami or along the Delaware River. Use of Gulf of Mexico ports could shorten transportation distance for Latin American product destined for Southern and Midwestern U.S. markets. This paper reports results of a survey designed to reveal industry perceptions of the physical and marketing infrastructure, and marketing advantages and constraints, offered by selected Gulf ports. |
