Food nutrition labels have been used for over a decade to aid consumers in making more informed diet choices and to potentially reduce societal costs from diet-related diseases and health conditions. While there is some evidence of the effectiveness of nutrition labels in changing consumption patterns, the scale of such improvements have been marginal. This has led certain government agencies to consider alternative forms of nutrition information. One such approach is front-of-pack (FOP) nutrition labels which provide simple, easily accessible information on a limited number of key nutrients. Scales or Stars? Consumer Preferences for Food Quality Signals AgEcon

Food quality has become an increasing concern in the public health arena over recent years. Food manufactures and processors hygiene performance plays a crucial part in producing safer food products. While there are inspections assessing plants'’ hygiene performance, there is little direct communication of performance measures to consumers. This paper uses survey data to determine consumer preferences among a set of four alternative food labels which report such plant level performance scores. How much information, as well as the format they most prefer, is compared using a range of econometric models. This is a report of a customer intercept survey of customers in seven central Ohio grocery stores. Six were conventional stores of a national grocery chain (Traditional Grocery); of these, two were suburban , two were city central, and two were in predominately rural locations. The seventh store was a health/whole foods store (Specialty Grocery). The survey addressed customer willingness to pay for alternative levels of organic content in breakfast cereals, customer purchase patterns for organic foods, and customer opinions about the benefits of organic and other food characteristics. Innovation in Food Products: First-mover Strategy and Entropy Metrics AgEcon

The objective of this research is to investigate food product innovation in the context of the first-mover strategy among food manufacturers within agrifood supply chains. The emphasis of the analysis is on developing a useful metric for tracking new product development in the context of first-mover strategy. Entropy is introduced as a novel and useful means of examining first-mover strategy and new product development (NPD) in general. Understanding the complexities of the first-mover strategy and tracking NPD with entropy metrics holds promise for enhancing the analysis of agrifood supply chains and assisting firms in deciphering broad strategies of their rivals.

Private sector responses to the challenge of managing food safety are explored. This paper clarifies the objectives of this special issue, introducing the key issues in each of the following articles. The degree and manner of regulatory compliance, an important element of any strategic food safety management decision, are discussed. Separate of the response to regulations, the incentives of firms to implement advanced management system are documented. The paper pays particular attention to firm efforts to minimize the potential for product recalls.

THE OPPORTUNITY COST OF FOOD SAFETY REGULATION - AN OUTPUT DIRECTIONAL DISTANCE FUNCTION APPROACH AgEcon

This paper provides a novel methodology to measure the impact of food safety regulation. An output directional distance function approach is applied to estimate the opportunity cost of food safety regulation and the shadow price of food risk. Such measures should be included as part of the overall cost of compliance for a more precise comparison of the benefits and costs of food safety regulation. Further, comparing the implicit shadow price of food risk and willingness to pay for food safety can bridge the gap of understanding how valuable safer foods are from the perspective of two different market participants - consumers and firms respectively.

INTERDISCIPLINARY APPROACHES TO FOOD SAFETY RESEARCH: OPPORTUNITIES FOR PARTNERSHIP AgEcon

Material from two interdisciplinary research projects, conducted by the Center for Food Safety at Texas A&M University (one completed, one ongoing), is presented. These international projects respectively assess the comparative costs of adopting various pathogen reduction strategies in beef slaughter plants in Australia and the food safety risks (and recommended strategies to alleviate any risks) in cantaloupe and cabbage production and packing in Texas and Mexico. The economic component of each project is introduced, along with findings (for the completed project) and methodologies to be adopted (for the ongoing project). The vital role of stakeholders in conducting this research is stressed to provide lessons for similar partnerships in the future.

EXPLORING MEAT AND POULTRY RECALL DATA FOR POLICY LESSONS AgEcon

Four measures are introduced to evaluate the likelihood of meat and poultry recalls and how firms and FSIS manage such events. These measures include the proportion of product retrieved (recovery rate), time to complete a case, the ratio of recovery rate and completion, and the hazard rate. This research aims to advance our knowledge and understanding of food safety programs by presenting statistical indicators which benchmark the food system. The results from OLS, Negative Binomial, and Cox regression models suggest that limited conclusions can be reached in terms of overall performance and factors that explain the timeliness of recalls. ISO 9000 -- A MARKETING TOOL FOR U.S. AGRIBUSINESS AgEcon

The relevance of the ISO 9000 series of quality management systems (QMS) for U.S. agribusiness is analyzed. Certified firms from several industries were surveyed to determine their before (ex ante) and after (ex post) perspectives of the QMS. Results for the agribusiness subsample are compared to those for firms from other industries to determine if they behave differently. Anticipated marketing advantages (increasing market share and providing access to new markets) of the QMS were critical factors that encouraged the pursuit of the certificate. The average cost to attain certification was $101.400 and to maintain certification was an additional $26,500 per year.

THE IMPACT OF HACCP ON COSTS AND PRODUCT EXIT AgEcon

Detailed information on firm level food safety costs is reported. Survey data for small and very small meat processors are modeled. Economies of scale in implementing Hazard Analysis Critical Control Point (HACCP) systems are investigated. Results indicate that even after controlling for scale, ver small plants incur higher compliance costs. Diseconomies of scope are assessed using the probability and number of products discontinued due to HACCP. Such "partial exit" is positively related to the current range of items produced and the need for facility modification. However, no evidence is found for higher levels of partial exit in very small plants.

Forecasts of the proportion of food retailing likely to be conducted over the Internet remain small, perhaps only contributing 2 percent of sales. One reason for this low market share is the challenge E-Grocers face in developing strategies which respond to four key areas of interest to consumers: signals of firm quality; signals of product quality; the range of products offered; and service, or customer-relationship management (CRM). The global Fair Trade market has experienced substantial growth over the past 13 years, as measured by both share and number of innovations. This has developed into a new worldwide market segment, and has helped improve the lives of hundreds of thousands of people. This report compiles data from Mintel’s Global New Product Database (www.gnpd.com), which records food, beverage, health and beauty products launched throughout the world. The company archives extensive information about each product, permitting users to explore emerging marketing strategies. From 1999 through 2011, GNPD recorded 4,465 Fair Trade innovations. Exploring Consumer Valuation and Preference Heterogeneity for Functional Foods Using a Choice Experiment: A Case Study of Tomato Juice Containing Soy in Ohio AgEcon

A discrete choice experiment is applied to examine consumer valuation of a new generation of functional foods. Data were collected from 1,704 households in Ohio through a mail survey. Results indicate health benefits and ingredient naturalness are positively valued but such preferences depend on individual's education, income, and food purchase behavior.

Selection of Food Safety Standards AgEcon

Food safety regulations are evolving to more performance-based regimes in which firrms have greater flexibility and responsibility for adopting effective controls. Within this context, this paper compares performance and process standards modeling the variability of industry-level compliance and therefore the resultant level of food safety. Monte Carlo simulations are conducted manipulating five factors: the variances of input use of efficient and inefficient firms, the proportion of inefficient firms in the industry, the mean of the error term for inefficient firms, and the policymakers' level of risk aversion.
