Sensory profile of breast meat from broilers reared in an organic niche production system and conventional standard broilers Organic Eprints

BACKGROUND: A sensory panel evaluated the sensory profile of breast meat from five broiler products: two conventional standard products (A and B) and three organic niche genotypes (I657, L40, K8) reared in an apple orchard. RESULTS: Twenty-two sensory attributes were evaluated, and 13 differed significantly between the products. The aromas ‘chicken’, ‘bouillon’ and ‘fat’ scored highest and the ‘iron/liver’ aroma lowest for the niche products. The meat was more ‘tender’, ‘short’ and ‘crumbly’, and less ‘hard’ and ‘stringy’ in the standard products than in one or more of the niche products. Product ‘I657’ was less ‘juicy’ than the rest. ‘I657’ and ‘L40’ were more ‘cohesive’ and tasted more ‘sourish’ and less of ‘sweet/maize’ than the standard products....

SUMMER chickens "on herbs" Organic Eprints

In the organic RDD project ’SUMMER’, an experiment with organic broilers with access to a large range area with herbs has been performed. The effect of chicken genotypes with different growth rates and different feeding strategies on the animals’ feed intake, growth, welfare, health and meat quality was investigated. The results so far indicate that it is necessary to use chicken genotypes with lower growth rates for a better welfare, and the focus should be on the individual genotype and its actual nutrient requirements and utilisation of feed from the range area.

Dyrenes velfærd afhænger i høj grad af sammenspillet mellem dyr, system og den daglige pasning, og der forventes derfor en stor variation i dyrenes velfærd fra bedrift til bedrift. Det generelle indtryk af flokkens sundhedstilstand er god: holdet har en lav dødelighed, en høj læggeprocent, meget få gulvæg, en god vægtudvikling, bortset fra et enkelt fald, ingen tegn på fjerpilning eller problemer med fodhelse. Strøelsens beskaffenhed har en indflydelse på udviklingen af fodbylder, sygdomsudviklingen, mulighederne for god fjerpleje, aktivering mv. Hos driftsgren 182-1 har strøelsen været af en meget høj kvalitet hele produktionsperioden igennem, dvs. med et meget lavt gødningsindhold i øverste lag, store mængder sand, ingen skorpedannelse eller fugt. Der er dog tilsyneladende en opformering af blodmider i sommer/efterår. Der er god adgang til reder, vand og sandbad, dog er siddepindene og foderstrengen noget...

Improved texture of breast meat after a short finishing feeding period of broilers in an organic free-range system Organic Eprints

In order to develop an organic broiler product with high ethical value, high meat quality and based on locally produced feed, we tested if a long period without high quality protein feed followed by a finishing period with a high quality protein ration would affect the meat quality. Two genotypes were included in the experiment (The Hubbard breed ‘JA757’ and the Sasso breed ‘T851’), and only female broilers were included. Produktion af kyllinger i frugtplantage kan give større spiseoplevelse Organic Eprints

Produktion af slagtekyllinger i frugtplantage åbner en spændende mulighed for større spiseoplevelse for den kvalitetsbevidste forbruger. Sensorikbedømmelser af brystkødet fra to typer slagtekyllinger, JA757 og New Hampshire viste en markant forskellig sensorisk profil. Hvor JA757 fik bedre score i visse lugt og smagsegenskaber, opnåede New Hampshire bedre score i teksturegenskaber som f.eks. mørhed og saftighed. For begge afstamninger var smagen og lugten af frisk kylling lavere ved højere slagtealder.

Økologiske kyllinger på urter - vejen til høj dyrevelfærd (D.5.4) Organic Eprints

Slagtekyllinger vokser hurtigt, hvilket er en egenskab opnået gennem mange års avl og foderoptimering. Dette resulterer ofte i benproblemer og et lavt aktivitetsniveau, hvilket øger risikoen for sår og svidninger på fødderne. Ved brug af nye kyllingetyper med langsommere vækst og ændret fodringsstrategi forventes bedre velfærd, kyllinge-kød med ny spisekvalitet og bedre udnyttelse af føde fra udearealet.

Økologisk ægproduktion er efter økologisk mælkeproduktion den vigtigste animalske økologiske produktion i Danmark. Det er imidlertid en produktionsform, der er følsom overfor kritik. Moreover, most of the hens stay inside the house or predominantly use the area just in front of the hen house. The effect of breed and feed-type on the sensory profile of breast meat in male broilers reared in an organic free-range system Organic Eprints

Studies on the sensory profiling of male broiler breast meat were carried out to evaluate the effect of two very different broiler breeds (JA757 and New Hampshire), two different feed types (broiler and grower feed) and age at slaughter (82 and 110 d). 2. The sensory profiling consisted of a pilot study, 4 training sessions, and finally the assessment. During the training session a panel of 9 assessors defined 17 attributes, which were used to describe the smell, texture and flavour of the breast fillets. Free-range pigs foraging on Jerusalem artichokes (Helianthus tuberosus L.) – Effect of feeding strategy on growth, feed conversion and animal behaviour Organic Eprints

The nutritional contributions from free-range foraging, growth, feed conversion and behaviour were investigated in 36 growing pigs foraging on Jerusalem artichokes (JA) and fed concentrates restrictedly (30% of energy recommendations) or ad libitum. Compared to the ad libitum fed pigs, the pigs fed restrictedly had a significant lower daily gain (560 vs. 1224 g pig_1), improved feed conversion ratio (17.6 vs. 42.8 MJ ME concentrate kg_1 live weight gain) and spent more time foraging JA tubers (7.9 vs. 1.1%). It is estimated that pigs fed restrictedly found approximately 60% of their energy requirement from foraging in the range.

Kyllinger fra frugtplantager smager godt Organic Eprints

Opdrætning af slagtekyllinger i en frugtplantage er fordelagtigt for både kyllingerne og frugtplantagen, men kyllingerne gør størst gavn i frugtplantagen når tidspunktet for den normale slagtealder nærmer sig. I forsøget er det undersøgt, hvad det betyder for spisekvaliteten at kyllingerne slagtes ved 91 og 120 dage. Resultaterne viste en positiv udvikling i smagen ved 120 dage, mens udviklingen af mørhedsgraden afhang af racen. De langsomst voksende racer var mest møre ved 120 dage, mens den hurtigere voksende race var mest mør ved 91 dage.

Male chicken thigh meat quality from fast and slow growing breeds from an organic free-range system Organic Eprints

Significant effects of Genotype and Age on several of the technological meat quality attributes measured were found. In general, the meat from fast growing birds (JA) was darker, more tender, had a higher water-binding but a higher cooking loss. Birds with a higher age at slaughter was more red, less tender and had a higher cooking loss. Regarding the protein concentration of the feed, no significant effects could be found on meat quality attributes, however a high protein concentration in the feed showed a tendency towards more tender meat.
