COMPARISONS OF HISPANIC HOUSEHOLDS' DEMAND FOR MEATS WITH OTHER ETHNIC GROUPS AgEcon

The objective of this research was to analyze the demand patterns of Hispanic households for meats in comparison with other ethnic groups using data from the 1998 Consumer Expenditure Survey. A system of demand equations of the LinQuad form were estimated for ten meat products using an incomplete system of censored equations. Hispanic households showed a clear preference for beef. Price, income, and household-size elasticities were estimated for each meat product by ethnic group. The demand for ground beef was the most income-inelastic product regardless of ethnicity. Household size had a positive effect on the probability of consuming a particular meat product but a negative effect on actual item expenditures.

A system of nine censored Engel curve equations was estimated for Hispanic households in the U.S.: grains, vegetables, fruits, milk, meat, legumes, fats, sugar, and beverages. Income and household size elasticities, with their respective confidence intervals, are reported and the results compared with other ethnic groups in the U.S.

Food expenditure patterns were examined for Hispanic households in the U.S. Engel curves for three food categories: food eaten at-home, food eaten away-from-home, and for total food, were estimated using four different functional forms. CONSUMER WILLINGNESS TO PAY FOR PESTICIDE-FREE FRESH PRODUCE AgEcon

The study uses primary data collected from a survey conducted in Georgia to analyze consumer preferences for testing and certification of fresh produce and consumers' willingness to pay for fresh produce that is certified as free of pesticide residues (FPR). An ordered probit model was estimated to identify the impacts of various exogenous variables on the probability of consumers' willingness to pay for a number of alternative price premiums. The results indicate that consumers' willingness to pay differs with respect to a number of factors. The study concludes that most of the consumers recommend testing and certification, but they oppose large price markups for certified-FPR fresh produce.

U.S. HOUSEHOLD CONSUMPTION OF FRESH FRUITS AgEcon

This study uses the 1987-88 U.S. Department of Agriculture Nationwide Food Consumption Survey data to analyze the impacts of income, prices, and selected socioeconomic characteristics on household consumption of fresh fruits. Results suggest that fresh fruits are considered economic necessities, with own prices significantly influencing consumption. Cross-price effects are generally weak and insignificant, but the number of adults in the age group 18-64 is an important determinant of household consumption of fresh fruits. While nutrition information and household savings have significant, positive influences on most fresh fruit consumption, the presence of a working wife has a significant and negative influence.

A COMPOSITE SYSTEM DEMAND ANALYSIS FOR FRESH FRUITS AND VEGETABLES IN THE UNITED STATES AgEcon

Price and expenditure elasticities at retail level for 11 fresh fruits and 10 fresh vegetables were estimated by employing a composite demand system approach and using annual data. Most fresh fruits and vegetables were found to respond significantly to changes in their own prices but insignificantly to changes in total expenditures. The demand for fresh fruit group appeared to have had a clear upward trend since 1973. However, no significant trends were found in the demands for individual fresh fruits or vegetables. The study partially incorporated the interdependent demand relationships between fresh fruits (vegetables) and all other commodities, yet effectively avoided the problem of insufficient degrees of freedom.

The study identifies differences in consumer characteristics and the selection of the type of a retail outlet in pecan purchases. Within the framework of utility maximization, an empirical model is specified and estimated using multinomial logit. The estimation is based on data collected through a nationwide survey. Calculated marginal probabilities show the importance of age, household income, and household size among the important consumer characteristics that influence the selection of a retail outlet. Employment and the timing of pecan purchases also influence the use of a specific type of retail outlet. Willingness to Pay for Irradiated Meat Products: A Comparison between Poultry and Pork AgEcon

Food processors are interested not only to increase the safety of their products but also to reduce losses associated with foodborne illness problems. Irradiating food products provides one means of addressing the foodborne illness issue by significantly reducing the presence of foodborne bacteria and diseases. The objective of the study is to develop an empirical model to estimate the likelihood of consumers purchasing irradiated food products and their willingness to pay for irradiated poultry and pork products within a two-step decision-making process. Using actual retail data, this study is intended to profile consumers' social economic characteristics related to the growth of the fresh organic produce market with a generalized double-hurdle model. This study evaluates the promotion and advertising impacts on the demand for scanned purchases of Vidalia onions and estimates returns to promotion expenditures. The analysis uses supermarket scanner data collected from scanned purchases of Vidalia onions and promotion expenditures generated by the Vidalia Onion Marketing Order. An error-components model is estimated to determine the impacts of promotion expenditures for scanned purchases of Vidalia onions, own price, prices of substitutes and complements, demographics, and seasonal variables for 10 different markets over a 260-week period from 1996 to 2001.

Estimation of a Composite Food Demand System for the United States—A Revisit AgEcon

We revisit the composite food demand system for the United States covering the period from 1953 to 2008. We were unable to produce elasticity measures that are as close or similar to those reported in Huang and Haidacher (1983), although the same demand system specification was employed. Our results based on the more recent data set of 1982-2008 show that most of the own-price elasticities are negative and statistically significant, varying from -.1861 (poultry) to -.9476 (nonfood). In general, the estimated own-price elasticities appear to be smaller in magnitude or more inelastic than previously reported. In contrast, we estimate the significant income elasticities for food vary from .5172 (dairy) to 4.6687 (fish), while Huang and Haidaicher (1983)...

Consumer Willingness to Pay for Irradiated Poultry Products AgEcon

A probit model for whether or not consumers would buy irradiated poultry products is estimated jointly with an OLS equation for the price premiums that consumers are willing to pay for irradiated chicken breast meat. The results suggest that educating consumers about irradiation would be beneficial to the food industry.

How Much are Consumers Paying for Organic Baby Food? AgEcon

Using retail purchase data, price premiums and discounts associated with household demographics, market factors, and product attributes (focusing on the organic attribute for strained baby food) are estimated using a hedonic pricing model. Results suggest that the organic premium ranges from about 12 to 49 percent in 2004 and from 30 to 52 percent in 2006. Tests for significant changes relative to product attributes show that while the price of conventional baby food has stayed relatively the same, the premium for organic baby food has increased.
