Quality of organic foods – a model for comparative analysis Organic Eprints
Vasileva, Elka; Ivanova, Daniela; Tipova, Nina; Stefanov, Stilian.
The quality and safety of organic products has been the subject of lively debate in the scientific community in recent years. The growing demand for organic food is based primarily on consumers’ concerns about the quality and safety and the perception that organic foods are healthier and safer than conventional foods. This paper identifies and makes analyses of comparative research studies on the quality of organic and conventional foods conducted over the last fifteen years. Based on the food quality science fundamentals a conceptual model for comparative testing of product quality is proposed. The model examines the dynamic relationship between its three basic components: "Designed Quality", "Perceived Quality" and "Achieved Quality". The proposed model...

Organic products – the choice of bulgarian mothers Organic Eprints
Ivanova, Daniela; Vassileva, Elka; Stefanov, Stiliyan; Tipova, Nina.
The goal of the presented survey is to analyse the perceptions and attitudes of the group of mothers with small children as consumers of organic products. The self–administered questionnaire survey method in the form of anonymous interviews following a standardised questionnaire was used for the purposes of the survey. Within the course of this research their knowledge and understanding of organic foods and foods’ attributes as a motive for purchase were examined. Complete analysis of data is done on the basis of purchase of organic foods: frequency of purchase of organic foods specially marked as such; buying as result of special demand for organic products; willingness of consumers to pay a higher price for organic foods.

Consumers' Perceptions of Organic Foods in Bulgaria: Evidence from Semantic Differentials Application Organic Eprints
Vasileva, Elka; Ivanova, Daniela; Zabunov, Georgi; Tipova, Nina; Stefanov, Stiliyan.
The main tendency for most countries in Central and Eastern Europe is their organic production to be developed mainly for the purpose of export. This leads to the impossibility for organic products to be adapted to the local market and their price happens to be too high for consumers from these countries. The solution to this is the quick development and expansion of the domestic market for organic agricultural products and foods. The market of organic products in Bulgaria enlarged significantly in the last few years. Although the share of organic food products in the general food market in the country is relatively small - less than 5 %, the total area under organic products in Bulgaria (cultivated and wild collected) is more than 250 thousand. The...

Organic products in Bulgaria.Producers’ Manual. Organic Eprints
Ivanova, Daniela; Vasileva, Elka; Stefanov, Stilian; Tipova, Nina.
The market of organic products is developing all over the world at all levels. In Europe, America and Asia the rate of development has been impressive for years. Considerable efforts have been made in many countries with a relatively new or emerging organic sector to establish organic products on the market. In relation to this the export is not the only target for these activities – the local, regional and national opportunities are interesting and well understood alternatives. This Manual is aimed at organic food producers, processors and sellers to facilitate their activity. It contains existing data about the development of organic agriculture around the world, in Europe and in Bulgaria. Its aim is to provide information about the preferences of...

Studies on the Composition of Organic and Conventional Milk Products Organic Eprints
Antova , Ginka; Vasileva, Elka; Ivanova, Daniela; Kirilova, S..
The changes in the basic physicochemical characteristics and the lipid composition of Bulgarian organic and conventional dairy products (cow's yoghurt and cow's cheese) during the winter and summer period have been investigated. There were no significant changes in the basic physicochemical characteristics for organic and conventional milk products (fat content in dry matter, content of milk protein, dry matter, acidity, salt content) in the studied periods. Organic yoghurt has lower acidity in comparison with conventional yoghurt. Organic cheese is the only one with a degree of maturity (21.7% and 20.5%), corresponding to the regulated value in the Bulgarian state standards for cheese (not less than 14%). The lipids have identical fatty acid composition,...

Organic foods trade – a criterion for ecological culture and challenges Bulgaria faces Organic Eprints
Ivanova, Daniela; Vasileva, Elka.
The market of organic foods demonstrates a considerable development in the recent years – from a small niche serving a limited number of customers, today it is a market with increasing consumption. The demand of organic products is the result of consumers’ informed needs for healthy and safe foods and their ecological requirements. This is the most dynamic sector of the foodstuffs market in the world but the share of organic sales compared to the total amount remains around 2%. The paper examines in comparison the possibilities for development of organic agriculture and the organic foods market in Bulgaria in the period of accession to the European union. Based in the assumption that by buying organic products consumers take into account the need of...

КАЧЕСТВО НА БИОЛОГИЧНИТЕ ХРАНИ: ЛИТЕРАТУРЕН ОБЗОР Organic Eprints
Tipova, Nina; Stefanov, Stilian; Ivanova, Daniela; Vasileva, Elka.

Comparative study of total phenolic content and radical scavenging activity of conventionally and organically grown herbs Organic Eprints
Trendafilova, A.; Todorova, M.; Vassileva, Elka; Ivanova, Daniela.
The aim of the present study was to measure the relative phenolic content in commonly available conventionally and organically grown herbs and to evaluate their antioxidant capacity. Sage (Salvia officinalis), lemon balm (Melissa officinalis) and peppermint (Mentha x piperita) leaves, corriander (Corriandrum sativum) and fennel (Foeniculum vulgare) seeds were used in the present investigation. Total phenolic content (TPhC), measured by Folin-Ciocalteu method, and radical scavenging activity (RSA), using DPPH method were determined in infusions prepared from above mentioned herbs. TPhC ranged from 75.9 to 1126.5 gallic acid equivalents (GAE) mg/l infusion and RSA – from 7.03 to 91.65%. The obtained data also showed that infusions prepared from organically...

The results obtained from the four focus groups conducted in Bulgaria and the two focus groups in Romania during the period April – May 2007 were analysed. Within this comparative study the different associations which potential consumers in Bulgaria and Romania have for organic foods come to the fore. The willingness of participants in the focus groups to pay a higher price for organic foods, related to the greater added value due to their ecological method of production and healthy effect is discusses.
