Gør økologisk mad dig sundere - Hovedkonklusioner fra Ernæringsforskningen Organic Eprints
Lauridsen, Charlotte; Halekoh, Ulrich; Jacobsen, Maja; Jørgensen, Henry.

Development of an oral tolerance model in rats for investigation of bioactive food components Organic Eprints
Jacobsen, Maja; Juul-madsen, Helle Risdahl; Lauridsen, Charlotte.
In a recent study on rats, complete diets produced from three cultivation systems were compared on a range of health biomarkers, and notable differences appeared with regard to IgG levels(1). In order to chase this result, the objective of the present study was to develop an oral tolerance model in rats for comparison of diets composed of ingredients from different organic and conventional cultivation systems with regard to immunological responses.

Trace elements, bioactive secondary metabolites and vitamins are among the most important quality parameters in plants. Yet, very little information is available on their content, bioavailability and health effects in organically grown plant food products. The main objective of OrgTrace is to study the impact of different agricultural management practices relevant for organic farming on the ability of cereal and vegetable crops to absorb trace elements from the soil and to synthesize bioactive compounds (secondary metabolites, antioxidant vitamins and phytates) with health promoting effects. Based on different plant products produced in OrgTrace, diets were composed and the bioavailabilities of health promoting substances were analyzed in a human...
