Heterogeneity in pursed business strategies in local (organic) food value chains – Empirical evidence from Denmark Organic Eprints

The study provides a typology of different business strategies employed by Danish agricultural producers and processors in local food value chains comprising both organic and non-organic food producers and processors, and investigates how Danish agricultural producers and processors define and perceive local food and whether definitions and perceptions differ across stakeholders groups. Furthermore, the study analyses which factors determine the decision to become involved in local value chains and whether these determinants differ significantly across producers and processors. “Local” is becoming increasingly important in consumers’ food purchase decisions. Perceived benefits of local foods are rather similar to those of organic products, including aspects of taste, food safety, animal welfare and reduced environmental impacts. Yet, only limited knowledge is available regarding different consumers’ conceptualization of local food. Our study addresses this research gap by investigating organic versus non-organic consumers’ perceptions of local foods and these perceptions’ association with purchasing behaviour. Why do consumers of organic food have more nutritionally balanced diets? – a Danish study Organic Eprints

Policies encouraging consumers to follow nutritional dietary guidelines are widely used by governments as a strategy to improve public health. Organic consumers seem to adhere to nutritional guidelines more than others, but it remains obscure why, exactly, there is a correlation between eating healthily and organic consumption. Based on six focus groups, 1519 survey respondents, and purchase data from 2449 households (all data collected in Denmark), we found that not only dedicated but also occasional organic consumers eat more fruit and vegetables and less meat than consumers with no or little organic consumption. Consumer preferences for ‘localness’ and organic food production Organic Eprints

Purpose: A number of previous studies have analyzed the interface between consumer preferences for organic and local food. While organic food is based on well-defined production criteria, local food is less well defined and is often used to describe a variety of food characteristics. This study investigates Danish consumers’ preferences and trade-offs for organic production and multiple commonly mentioned, dimensions of local food: sales channel, size of company, and geographic location of animals used in the production focusing on differences between consumer segments.
