The collect sector of the organic winter wheat is in deep evolution following a widening of the outlets, on arrival of new operators resulting from the conventional sector and with a strong fluctuation in prices. The technological quality of organic wheat is predicted, in a restrictive way, from the protein content of the grains. The requirements of food safety and traceability lead to an increase in controls, beyond the constraints of certification.
