Using an analytic framework grounded in New Institutional Economics and property rights theory, concepts of power and control over access to critical assets along a supply chain has laid the foundation for the analysis of the development of the organic vegetable chain in Denmark. Two commodities were chosen as detailed case studies: organic carrots and iceberg lettuce. By combining qualitative and quantitative data bargain power was revealed to be growing at the retailer node, and producer-retailer relations were examined in detail. From a political economy perspective organic farming can be regarded as a social countermovement born out of the crisis between the second food regime (1945-1970s), and the birth of a new and third food regime in the 1980’s. Gennem de sidste par år er supermarkedernes forhandler magt overfor producenterne/pakkerierne tiltaget, og de benytter bestemte kontrol mekanismer samt diverse afgifter for at udøve denne magt. F.eks. er kreditperioden blevet forlænget fra 21 til 45 dage og i nogle tilfælde helt op til 90. Det vil sige, hvor producenten før fik sine penge for varer leveret efter 3 uger, går der nu op til 1½ til 3 måneder. Vi taler samtidigt om en varegruppe, der for det meste omsættes i løbet af en uge ude butikkerne. De forskellige typer af kontrolmekanismer kan i fremtiden gøre det vanskeligere for de mindre producenter at få adgang til supermarkedets forbrugere. |

Ecological economics (EE) is proposed as an approach to decision making and planning in organic farming. It is argued that EE is better suited for this task than the conventional neoclassical economy approach. The contribution that EE can make to the organic farming movement is apparent on the ontological level, through its focus on socio-economic systems as nested subsystems of the ecosystem. De økologiske fødevarekæder er i nogle sammenhænge organiseret som et alternativ til den traditionelle agroindustrielle fødevarekæde, mens de i andre sammenhænge følger den traditionelle kæde fra "jord til bord". Hvorfor gør de det? Og hvilke forskelle og ligheder findes der i organiseringen af de økologiske fødevarekæder inden for mælkeprodukter, grøntsager og kød (fjerkræ, svin, får og kvæg)? The aim of the research project is to analyze the future development of the Danish organic food sector through focusing on two agro-commodities: vegetables and pork.
