Long-term effects of castration, chronic intermittent social stress, provision of grass silage and their interactions on performance and meat and adipose tissue properties in growing-finishing pigs Organic Eprints
Holinger, M.; Früh, B.; Stoll, P.; Pedan, V.; Kreuzer, M.; Bérard, J.; Hillmann, E..
In order to assess chronic stress in entire and castrated male pigs and to describe effects of a provision of grass silage in those pigs, a 2 × 2 × 2 factorial experiment comprising the factors castration, chronic intermittent social stress and provision of grass silage was carried out with 147 growing-finishing pigs from 25.6 to 102.1 kg body weight. The experimental design allowed investigating interactions between the three factors, but only few were statistically significant. Stress exposure consisted of repeated short-term confrontations with unfamiliar pigs and short-term separations. Carcasses of stress-exposed pigs had thicker backfat, lower lean meat percentage and a different fatty acids composition of the adipose tissue. While entire males...

Relationship between stress-related exsanguination blood variables, vocalisation, and stressors imposed on cattle between lairage and stunning box under conventional abattoir conditions Organic Eprints
Probst, J.K.; Spengler Neff, A.; Hillmann, E.; Kreuzer, M.; Koch-Mathis, M.; Leiber, F..
Physiological and behavioural reactions of cattle to handling procedures in a commercial abattoir (electrical prodding actions and duration of the animals׳ stay in the stunning box) were evaluated and set in relation to sex, breed type, and carcass weight. A total of 192 cattle comprised of 45 bulls, 61 steers, and 86 heifers from different breed types (30 dairy breed, 70 beef breed, and 92 crossbreds) were observed from lairage to slaughter during one day. The frequency of electrical proddings and the waiting time in the stunning box was recorded for each individual. As a measure of a behavioural stress response, the number of vocalising animals was recorded. Exsanguination blood serum samples were analysed for cortisol, glucose, and lactate...

Alpine vegetation type affects composition of nutritionally important C18 fatty acids in tissues of lambs from different breeds Organic Eprints
Willems, H.; Kreuzer, M.; Leiber, F..
A total of 110 lambs of the breeds Engadine Sheep and Valaisian Black Nose Sheep were fattened on one lowland and three different alpine pasture types. The experiment was conducted in two consecutive years and lasted for 9 weeks of grazing in each year. Immediately afterwards, the lambs were slaughtered. Perirenal adipose tissue and the Longissimus dorsi muscle were analysed for fatty acid composition. The lambs on the lowland pasture had the lowest proportions of linoleic and α-linolenic acid in the lipid fraction of these tissues. Additionally, there was a clear differentiation in these proportions when lambs grazed different alpine vegetation types. This was related to the content of phenolic compounds rather than the fatty acid contents of the swards,...

Alpha-linolenic and linoleic acid in meat and adipose tissue of grazinglambs differ among alpine pasture types with contrasting plant speciesand phenolic compound composition Organic Eprints
Willems, H.; Kreuzer, M.; Leiber, Florian.
The special quality of foods from alpine grazing systems concerning their fatty acid (FA)composition is well established. However, the contribution of different specific vegetationtypes and the animal’s genotype to this alpine effect is still unclear. In the present study, the FA profiles of muscle and adipose tissue lipids were determined in lambs that hadgrazed either an intensively managed lowland pasture or one of three characteristic alpinevegetation types differing in plant species number and composition, forage quality andamount, and composition of phenolic compounds and FA. On each vegetation type and intwo subsequent years, two groups of lambs (seven Engadine sheep, ES; and seven ValaisianBlack Nose sheep, VS) grazed for 9 weeks and were...

Futterbewertung im Umbruch? Beziehung zwischen dem Alter von Rindern und Ochsen aus einem Weidemastverfahren und Merkmalen der Fleischtextur (Zartheit) Organic Eprints
Scheeder, M.R.L.; Meili, E.; Bezencon, M.; Spring, J.; Kreuzer, M..

Vegetation-type effects on performance and meat quality of growing Engadine and Valaisian Black Nose sheep grazing alpine pastures Organic Eprints
Willems, H.; Kreuzer, M.; Leiber, F..
Lambs of two Swiss mountain breeds, Engadine Sheep (ES; n=55) and Valaisian Black Nose Sheep (VS; n=55), were fattened in 2010 and 2011 on one lowland and three alpine pastures. Groups of six to seven lambs per breed were allocated to pastures of a size allowing ad libitum intake on the following four vegetation types: (i) species-poor and nutrient-rich lowland (400 m a.s.l.) ryegrass–clover ley on flat terrain (‘lowland-rich’); (ii) alpine, species-rich and nutrient-rich vegetation type on a flat terrain (1950 m; ‘alpine-rich’); (iii) alpine, species-rich vegetation type, moderate in nutrients on steep terrain (2150 m; ‘alpine-moderate’); and (iv) alpine, species-rich and nutrient-poor vegetation type on steep terrain (2150 m; ‘alpine-poor’). Lambs were...

Species-rich swards of the Alps: constraints and opportunities for dairy production Frontis
Van Dorland, H.A.; Wettstein, H.R.; Kreuzer, M..
The swards of the alpine grasslands represent a unique feed resource that sustains animal agriculture to the present. The complex animal–plant interactions during cattle grazing influence grassland dynamics, which under proper grazing management maintain the sustainability of these alpine swards and thereby the persistence of alpine dairy production systems. However, dairy production on alpine swards is limited by the herbage quality and the physiological impact of alpine summer grazing on dairy cattle. Abandonment of the alpine regions and shifts from milk production towards more extensive livestock systems are trends increasingly seen during recent decades. Current interest in the positive health aspects of animal products, especially in beneficial...
