o meet the growing demand of fish feed for aquaculture, an increasing proportion of marine ingredients are being replaced by blends of plant products. Two probiotics were tested as alternative treatment to limit the prevalence of the vertebral column compression syndrome (VCCS) in rainbow trout, compared with a preventive treatment with florfenicol. Either the antibiotic, or a lactic acid bacterium, Pediococcus acidilactici, or a yeast, Saccharomyces cerevisiae var. boulardii, was introduced into experimental diets, which were compared with the control diet without supplementation. The antibiotic caused some mortality during the first week after treatment, likely because of the toxicity of the compound. An 84-day experiment assessed the combined effects of two fresh water quality levels (H: 1.71 +/- 0.15 mg O(2)l(-1) and 0.28 +/- 0.01 mg l(-1) total ammonia nitrogen (T-AN), L: 5.15 +/- 0.07 mg O2l(-1) and 0.54 +/- 0.01 mg T- AN l(-1)) and 3 stabilized stocking densities: 24.8 +/- 0.2, 74.2 +/- 0.5 and 120.0 +/- 0.9 kg m(-3)) on rainbow trout. Fish were fed using demand feeders with rewards proportional to stocking density. Mass increase was significantly affected by water quality and stocking density, being highest in H water and the lowest at 120 kg m(-3). World fish farm production is growing rapidly. However, the supply of fishmeal and fish oil, the major ingredients of fish diets, has reached a limit because of the limits in the exploitation of wild fish stocks that cannot be increased to meet a growing demand. The main response, especially in Europe, has been the progressive replacement of fishmeal and fish oil by plant products. However, the strong reduction of growth and sometimes survival of fish fed highly substituted diets has urged research on the genetic potential for adaptation to plant-based diets. Two strains of Saccharomyces cerevisiae were tested as probiotics for rainbow trout fry, during the first month of feeding. Each strain was introduced into separate diets, at the rate of 106 CFU g− 1 and their effects were compared with those of a control diet. Two rearing conditions were simultaneously compared, to test the adaptability of the probiotic treatment. A lean muscle line (L) and a fat muscle line (F) of rainbow trout were established (Quillet et al., 2005) by a two-way selection for muscle lipid content performed on pan-size rainbow trout using a non-destructive measurement of muscle lipid content (Distell Fish Fat Meter®). Genetic adaptation to dietary environments is a key process in the evolution of natural populations and is of great interest in animal breeding. In fish farming, the use of fish meal and fish oil has been widely challenged, leading to the rapidly increasing use of plant-based products in feed. However, high substitution rates impair fish health and growth in carnivorous species.
