Danish case report: The Danish Food Communities Organic Eprints

The Food Communities was chosen as a case for HealthyGrowth because they constitute a major novelty within the Danish foodscape. As indicated in section 3, the Food 2 Communities have emerged as the latest incarnation of a series of attempts to forge alternative food networks operating beyond the supermarket system. Denmark is distinguished by a large market share of organic food being sold via supermarkets, but The Food Communities are a novelty due to two factors, (1) they have experienced a rapid growth since the outset in 2010, and (2) they are organised in a decentralised manner, where they continue to split up the network in chapters, each operating within their distinct local area. The Food Communities are a predominantly urban phenomenon.

Nye udviklingsveje for afsætning af økologiske kyllinger Organic Eprints

Økologiske kyllinger fylder under 1% af kyllingesalget, og samtidig er kyllinger en af de varegrupper, hvor det økologiske markedsandel er lavest. Den gennemsnitlige økologiske markedsandel er eksempelvis på 7%, og for enkelte varegruppers vedkommende er den mere end 25% (æg og mælk). Derudover er aspekter som dyrevelfærd, bæredygtighed og smag, hvor den økologiske kyllingeproduktion kan adskille sig markant fra den konventionelle produktion, vigtige elementer i forbrugernes valg af dagligvarer, og der synes såle-des at være et stort potentiale for at udvide markedsandelen af økologiske kyllinger. A sustainable agriculture is dependent on how we care for and cultivate our soil. Not only in terms of producing food of good quality, but also in terms of maintaining the quality of the soil to feed future generations, nature of the farm land, of the surrounding landscape, and not least the quality of rural livelihood. From a neoclassic perspective the market is seen as driver of a sustainable development, depending on will of the political consumer. This argument though is self-contradictory because in a neoliberal food regime the only relation consumers have to how the soil is cultivated is through decoupled global food chains, and most people only know little about the actual agriculture and the cultivation of the soil. Organic consumption: a form of hybrid communication Organic Eprints

This paper discusses how the consumption of organic food can be understood as a form of hybrid communication. By describing the consumption of organic food as a form of hybridity the paper shows how different codes such as health, aesthetics and morality can be reproduced by re-entering the economic code. This process of hybridizations allows the communication to handle more complexity than had it only been coded economically. But on the other hand the hybridization also creates an increased amount of social complexity. The paper argues that in order to better understand how consumption functions systems theory provides an analytical perspective that is well attuned into the entanglement of the different logics.

Partnerships as an organizational form in midscale values based food chains Organic Eprints

Partnerships can ‘expand’ the future but only when the involved organizations take on the responsibility within the organization. Mutual commitment is required (time). Partnerships are observer dependent, there is no universal recipe on success  the mutual mutuality depends solely on the involved parties (values). The mutual mutuality is based on reciprocal trust. The successful partnerships observed in the Healthy Growth project builds on strong normative values and a mutual commitment to act up on these values. To actualize these values successful requires determination and commitment from the involved organizations. This cannot be left to a ‘demand from the consumer’.

Mediation of quality in values-based food chains Organic Eprints

Organic agriculture as a movement builds on a range of values concerning a sustainable development of organic farming. The internal debate within the organic movement is pointing in different directions in relation to a sustainable development of organic farming (Alrøe and Noe 2008). Pivotal for this debate is the formulation of the basic principles and values that are to be fundamental for the development of organic farming in praxis (Alrøe and Kristensen 2004). Furthermore this debate also concerns an ambition of the development of organic agriculture to be market driven. The organic regulation and associated control is developed to support this marketization of the organic products.

Coming together: Organic food in a systemic perspective Organic Eprints

Organic food is an integrated part of the overall food regime in most European countries. In many contexts the organic market has experienced as division between direct marketing initiatives based on strong values and anonymous bulk chains with a focus on handling large volumes. In reason years a third position has gain an increasingly larger market share. This position is occupied by initiatives that seek to combine both growth and a strong commitment to their founding values. Though, many of these initiatives experience trouble in achieving their ambition and find that combining values and volume is an indeed challenging process.

The Gram Slot/Rema 1000 case is a food chain, which consists of organic dairy products made by Gram Slot and sold by the supermarket chain Rema 1000 Gram Slot has another branch of their enterprise, consisting of a number of leisure and cultural activities taking place at Gram Slot. In terms of agricultural products the food chain studied involves one major producer, Gram Slot. The distribution of the agricultural products takes place partly through Gram Slot’s own farm shop, but the bulk part of the products are sold via the 259 Rema 1000 supermarkets in Denmark. Markets for ethical products are seemingly faced with an inherent flaw, namely the so-called attitude-behaviour gap. The gap implies that when consumers indicate preferences for ethical products only a minor part actually walk their talk. In response, an extensive literature has developed that attempts to either explain the inconsistency or develop ways of bridging the gap. Hybridizing money and moral: the case of Value Based Food Chains Organic Eprints

Value Based Food Chains (VBFC) differ throughout Europe but are often found to share the same problem of integrating and maintaining their values as the chain grows. In this paper we analyse a number of VBFC that has succeeded in this manoeuvre. We argue that the success of these cases rely on the capability of the VBFC in question to combine both normative values and economic concerns equally, by allowing the two to become hybridised. The hybridisation, we argue, helps securing the reproduction of the central normative values without reducing them to an ‘added value’ to pass from one actor to another.
