Farmers Markets are receiving an increasing attention by both food chains actors and social scientists. Economic and sociological studies are contributing to the comprehension of these forms of exchange. Both consumers and producers are fostering their expectations about the renewal of a mode of exchange which sustained local production‐ consumptions linkages. The main economic function of these organizational structures seems to be the reduction of the price paid by the consumers and the enhancements of allocation of farm products. Reacting to law based technological change: opportunities derived from organizational learning in the Italian poultry sector AgEcon

A ban on using Antimicrobic Growth Promoters (AGPs) in the poultry sector has recently come into force in accordance with European Union norms. This innovation of the institutional environment greatly influences the technology in use. This study conceptualizes the poultry industry in terms of technological paradigm and technological trajectory and suggests that the expected changes are costly to achieve due to the scarcity of technological opportunities. The idea proposed is that the interactions among agents along the supply chain may contribute to the solution of the emerging issues. Trust and Contracting in Agri-Food Hybrid Structures AgEcon

The paper aims at examining the hypothesis that the influence of trust on contract can be thought of as a dynamic factor of organizational choices in supply chains. The relationship between contract and trust is delineated on the basis of institutional environment, contractual incompleteness, safeguards and restrictive provisions. The interaction between individual and system elements in the formation of trust and its influence in hybrid contracting is considered. Trust, Contracting, and Adaptation in Agri‐Food Hybrid Structures AgEcon

The paper considers the relationship between trust and governance structure from a Transaction Cost Economics perspective. The role of trust in the coordinating decisions is variously conceptualized according to the theoretical view adopted by the scholars. The present study adopt the three‐level schema introduced by Williamson (1996) and suggest that determinants of trust may operate both at institutional and governance structure level. The analytical framework depicted maintains that trust may determine a reduction of ex post transaction cost in the adaptation of hybrid structure. Contractual Choice and Food Safety Strategy: Some Empirical Findings in Italian Poultry Sector AgEcon

The analysis of contract choice is here related to the contracting nature of the hybrid governance structures. The approach of the empirical analysis is concerned with the transaction between farmers and processor in poultry supply chains and it is based upon a choice experiment to estimate the marginal values of contract attributes. Final remarks take into account the role of contract attributes in ensuring the degree of food safety and suggest a tentative organizational explanation of the degree of safety supplied. The study is funded by VI European Research Program (Strep Project “Poultryflorgut”).

Contributing to the Analysis of the Sustainability Management in the Organization of the Green Procurement: Theoretical Elements and Empirical Evidence from a Case Study AgEcon

The introduction of the environmental dimensions within the Public Administration procurements and contracts is increasingly held as contribution to the sustainability of the chains governance. The so called Green Procurement (COM (2001) 274, l.n.488/1999) thus represents an important institutional innovation in Agri-Food Chains and it may potentially act as driver of changing toward a better rooted managerial approach to sustainability.
