Quantity surcharges exist when unit prices are higher for larger packages. We hypothesize that various sizes of goods are differentiated products, and this explains some surcharges. Estimating a random-coefficients logit demand model, we examine own and cross elasticities to determine the level of differentiation between products with different size packages.

CONSUMER PREFERENCES AND WILLINGNESS TO PAY FOR FOOD LABELING: A DISCUSSION OF EMPIRICAL STUDIES AgEcon

We discuss empirical research on consumer preferences and willingness to pay for several types of food quality or attribute labeling. The selected categories we include are eco-labels, GM food labels, U.S. state agricultural-product labels and European Protected Geographical Indication labels, BSE-tested-beef labels, and “"Fair Trade”" labels. We discuss generalizations that can be drawn from the studies as a group. Most importantly, we find that consumers must perceive high quality in order for the food product to command a premium. Furthermore, the perception of quality may sometimes differ across consumers.

Functional Foods in the Marketplace: Willingness to Pay for Apples Enriched with Antioxidants AgEcon

The attention on so-called “functional foods” has been growing as consumers become more concerned with diet and nutrition. This article aims to measure consumers’ response to apples with “naturally enriched antioxidant coatings.” Surveys were conducted in grocery stores in Seattle, Washington and Spokane, Washington. The results suggest that consumers have a somewhat positive attitude towards functional foods in general and with apples enriched with antioxidants in particular. A contingent valuation technique was used to assess factors affecting consumers’ willingness to pay for the apples with antioxidant coatings. Fluid milk consumption in urban Qingdao, China AgEcon

This study relates the social-demographic characteristics of urban Chinese consumers to their consumption of fluid milk. A Tobit model is estimated drawing on individual consumer survey data collected in urban Qingdao in China in 2005. The major results of this study indicate that fluid milk consumption in urban Qingdao is much higher compared to China’s national level. The effect of increased income on milk consumption is positive, as expected. The expansion of modern food retailers also appears to play a positive role by facilitating consumers’ fluid milk consumption and influencing their food shopping patterns. U.S. Grass-Fed Beef: Marketing Health Benefits AgEcon

Grass-fed beef is a product with health benefits that may appeal to health-conscious consumers. This article analyzes the results of a choice experiment to explore the importance of health benefits in the marketing of grass fed beef. Both price and fat and calories have a negative effect on the choice of the product, and higher levels of omega-3 fatty acids have a positive effect. Price is the most important attribute to respondents (39.5%), a low level of fat and calories is the second most important attribute (36.9%), and the level of omega-3 fatty acids is the least important of these factors (23.6%).

This paper develops cost effective investment rules for farm worker housing and applies the model to farm worker housing in the state of Washington. The state must meet varying seasonal farm worker housing needs at minimum expense. In this study we examine investment rules to choose among different housing technologies in order to minimize the total costs of housing consistent with achieving welfare goals. The research extends existing peak-load models to the multi-season planning cycle case and applies the approach empirically to a new subject area.

Reputation and Production Standards AgEcon

This paper analyzes a monopolist's behavior when consumers cannot observe the production standards. These types of products are usually known as credence goods. The steady-state level of quality with credence goods is found to be lower than that with experience goods, and perfect information goods. The finding that only perceived quality, which is effectively a filtered version of true quality, affects reputation indicates rewards for high quality production are lower in the credence good case. Further, an increase in the level of monitoring can increase the true level of product quality in the market for credence goods.

CONSUMER ATTITUDES TOWARDS GENETICALLY MODIFIED FOODS IN NORWAY AgEcon

There is a lack of public acceptance of genetically modified (GM) food products in Europe. Using a dichotomous choice contingent valuation methodology, we find that willingness to accept (WTA) for GM food in Norway is positively affected (i.e. a greater discount is required) by higher levels of self-reported risk perceptions toward GM-food and preferences for domestically produced food. The estimation results show that self-reported knowledge about biotechnology increases WTA while higher levels of formal education decrease the WTA for GM-foods. There has been a recent trend towards purchasing land for farmland preservation, wildlife refuges, other conservation, and cultural and historical preservation. There is a great deal of unexplained variation in the dollars paid per acre for these properties. The theoretical basis for this analysis is an option value model with stochastic returns to development. The data used in our analysis is sales transactions data for natural resource conservation and farmland preservation purposes from throughout the United States. We find that land, when it would be best used for development, but is not developed, has a significantly higher price.

Impacts of the Westernization of Food Preferences on Medical Costs in China AgEcon

The dietary changes in China to include more meat, dairy, and processed foods, are commonly attributed in literature to income increases, urbanization, and the availability of western food products. As seen in other Asian countries, these new food habits may increase obesity, diabetes, and other degenerative diseases among the Chinese people. These new health concerns will likely have economic consequences in terms of productivity losses and increased health care costs. DEMAND ESTIMATION IN THE PRESENCE OF AN UNOBSERVABLE PRODUCT ATTRIBUTE: THE CASE OF MINT QUALITY AgEcon

This article estimates the demand for mint-flavored gum products using grocery store sales data and accounting for consumers’ valuation of quality. Unobserved product attributes, such as flavor quality, are important elements to consider when estimating the demand for gum. The estimation results suggest that gum is an inelastic product. A positive relationship between willingness to pay and unobserved quality was identified, implying that gum industry should be able to command a premium for higher quality mint flavored products.

ASSESSING CONSUMER PREFERENCES FOR ORGANIC, ECO-LABELED, AND REGULAR APPLES AgEcon

We assess consumer choice of eco-labeled, organic, and regular apples, and identify sociodemographic characteristics affecting the choice among those three alternatives. Eco-labeled apples are less desirable than organic when food safety, the environment, and children's needs are considered. Characteristics that may be expected to positively affect the decision to buy eco-labeled apples relative to regular apples actually have the opposite effect with the inclusion of the organic alternative. When considering all three choices, the eco-labeled product is found to be an intermediate choice among consumers.

FEDERAL GRAZING REFORM AND AVOIDABLE RISK AgEcon

Recent rangeland reform attempts have increased ranchers'’ uncertainty of retaining grazing permits on federal land. This uncertainty is analyzed with a model of grazing on federal land. Ranchers facing this uncertainty will behave differently than if they were guaranteed the renewal of grazing permits at constant real grazing fees. It is shown that the socially optimal outcome may be achieved by adding avoidable risk through targeted rangeland reform. Rangeland reform attempts that create unavoidable risk can make both ranchers and environmental groups worse off.

Consumer Preferences for Socially Responsible Production Attributes Across Food Products AgEcon

This study examines consumer preferences for three socially responsible products: minimal-pesticide strawberries, fair-trade bananas, and milk from pasture-fed cows. In-person survey data were collected in four states. Understanding preferences for these characteristics is difficult because they may appeal to different individuals depending on their personal attitudes and values. To address this issue, health, environmental and other attitudes are measured based on survey questions. Responses to these questions are used to produce explanatory factor scores. Stated preference models, both with and without factor scores, are estimated to evaluate the relative strengths of consumer preferences and motivations to purchase these products.
