The aim of the study was to determine the potential, impact and prerequisites of localization and enhanced recycling in a rural food system, illustrated by the case of Juva milk. An interdisciplinary scenario based on the increase of local, organic milk to 50 % of milk comsumption was created and the sustainability was compared, on the basis of the statistics and data collected from the actors, with the present milk system. |

The paper focuses on public catering as a significant service provider in the modern society and a potential large scale user of organic food. In order to argue for the use of organic food by public catering, the traditional nutrition oriented public catering is reframed and repositioned as sustainable public catering system, responsible in mediating the well-being of both bio-physical environment and individual consumers. As an industrialised high quality food commodity, organic milk would present a reliable option to feature catering for sustainability. However, its use in schools, hospitals and workplaces is minimal in Finland at the moment. To boost perspective taking on organic milk among caterers, a co-developmental dialogue in terms of organic milk was employed by researchers and practitioners. Agriculture for food production has come to crossroads: while conventional agriculture needs to improve environmental and social performance, organic agriculture needs to increase the production volumes and to re-establish the connctedness between producers and consumers. Through re-localising the food production there is an increasing convergence of the farming practices towards sustainable agriculture acknowledging the prospects, advantages and limitations of the different production systems.
