Aufgrund der deutlichen Handelspreisdifferenz sowie des begrenzten Rohstoffangebots erhöht der boomende Markt für Biolebensmittel die Gefahr der Falschdeklaration konventioneller Ware. Zum Schutz der Konsumenten wie auch der Produzenten werden daher Verfahren zur Überprüfung der Kennzeichnung benötigt, die – in Ergänzung der betrieblichen Kontrollen – im Zweifelsfall eine Unterscheidung biologisch und konventionell erzeugter Lebensmittel auf Ebene des Detailhandels erlauben.

Der ständig wachsende Marktanteil ökologisch erzeugter Milch erfordert leistungsstarke und zuverlässige Methoden zur Herkunftssicherung der Milch. Die Zusammensetzung der Milch, speziell die Gehalte an ω3-Fettsäuren (FS) werden im Wesentlichen durch die Fütterung beeinflusst. Deshalb wurde die NIRS als mögliche Alternative zur Gaschromatographie (GC) für die quantitative Analyse der FS bewertet und ihre Eignung für die Unterscheidung von ökologisch und konventionell produzierter Milch geprüft. In Deutschland ist die Nachfrage nach Bio-Lebensmitteln in den letzten Jahren stetig gestiegen. So erhöhte sich der Absatz von Bio-Trinkmilch in 2007 im Vergleich zum Vorjahr erneut kräftig um 34 Prozent (ZMP, Bonn) und der Bio-Anteil beträgt inzwischen bei Frischmilch knapp elf Prozent. Aufgrund sporadisch resultierender Lieferengpässe bei Bio-Milch sowie der vorhandenen Handelspreisdifferenz besteht zunehmend ein potenzielles Risiko der Falschdeklaration konventionell erzeugter Milch als Bio-Ware.

Ist die Unterscheidung ökologisch und konventionell erzeugter Milch mittels Nahinfrarotspektroskopie möglich? Organic Eprints

The aim of the investigations was to evaluate the ability of NIRS to differentiate between organically and conventionally produced milk. Milk from organic and conventional production systems was analysed for milk fat fatty acid content by gas chromatography, and NIRS calibrations were developed with these reference data by partial least square regression. As a result, a standard error of prediction of 0.099 % for C18:3ω3 and a regression coefficient of 0.9 were obtained. For the prediction of C20:5ω3 the standard error was 0.014 %, and the regression coefficient 0.84. The contents of ω3-fatty acids predicted by NIRS show seasonable differences with a higher level in organic milk samples. The mean value of C18:3ω3 content in organic milk was 0.73 ± 0.16 %...

Applicability of organic milk indicators to the authentication of processed products. Organic Eprints

The validity of established threshold values for the analytical authentication (stable isotopes and fatty acids) of organic drinking milk in Germany was determined for more strongly processed organic dairy products (n = 56). Milk fat extracted from both soft and semi-hard cheeses, butter, cream, sour cream, buttermilk, yoghurt and low-fat milk always possessed an alpha-linolenic acid (C18:3w3) content above the minimum level of 0.50% and a stable isotope ratio of carbon (delta13C) below the maximum level of -26.5‰ required for organic milk. Traceability of organic fish - Authenticating the production origin of salmonids by chemical and isotopic analyses Organic Eprints

To develop a practical methodology for the authentication of organic salmonid products, 130 fillet samples of trout and salmon originating from organic and conventional aquaculture as well as wild stocks (salmon) were collected from the German market over one year. Combined stable isotope analysis of d15N and d13C in defatted dry matter allowed differentiation of organically farmed from conventionally farmed salmon and brown trout, whether raw, smoked or graved. Die aufgrund der Begrenzung natürlicher Ressourcen wachsende Bedeutung der Aquakultur für die Produktion von Speisefisch erfordert geeignete Instrumente zur Rückverfolgbarkeit von Fischereierzeugnissen. Dies gilt insbesondere im Hinblick auf die zum 01.07.2010 in Kraft getretene ergänzende Öko-Verordnung (EG) 710/2009 bezüglich der Produktion von Tieren in ökologischer Aquakultur. Authentication of Organic Milk Using δ13C and the alpha-Linolenic Acid Content of Milk Fat Organic Eprints

The carbon stable isotope ratio (δ13C) and the alpha-linolenic acid (C18:3ω3) content of milk fat were analyzed to examine their applicability as general markers for the authentication of organic retail milk in Germany. To record the variable effect of feeding, including the seasonal influence on milk composition, three conventionally and three organically produced brands of retail milk were collected biweekly during a period of 18 months. Altogether 286 milk samples were analyzed. Threshold values for the identification of German organic milk were established and allowed to delimit almost all conventional samples. Zur Zeit stehen der Lebensmittelüberwachung keine analytischen Methoden zur Verfügung mit denen Deklarationen wie „Bio-Fisch“, „Bio-Lachs“ oder „Organic Salmon“ am Erzeugnis überprüft werden können. Das Ziel dieses Projektes bestand in der Entwicklung von objektiven, praxistauglichen Analysenverfahren zur Identifizierung von Lachserzeugnissen aus der ökologischen Aquakultur. Die Verfügbarkeit solcher Verfahren ermöglicht einen verbesserten Verbraucherschutz und eine Stärkung des redlichen Handels. Follow-up of stable isotope analysis of organic versus conventional milk Organic Eprints

Analysis of the stable isotope ratio of carbon (δ13C) and α-linolenic acid (C18:3ω3) content in milk fat is a useful indicator of organic milk production. Referring to corresponding measurements, further analyses of stable isotope ratios were performed in 120 samples of conventionally and organically produced whole milk collected from German retailers during a period of 18 months. Conventional milk predominantly exhibited higher δ15N values than organic milk, the latter of which never exceeded a maximum δ15N threshold value of 5.50‰. Der Absatz von Bio-Trinkmilch ist in den letzten Jahren deutlich gestiegen. Aufgrund der erheblichen Handelspreisdifferenz sowie des begrenzten Rohstoffangebots erhöht der boomende Markt allerdings die Gefahr der Falschdeklaration konventionell erzeugter Milch. Deshalb wurde im Institut für Sicherheit und Qualität bei Milch und Fisch am Standort Kiel des Max Rubner-Instituts an Verfahren zum Nachweis der Echtheit von Bio-Milch gearbeitet. Ein Nachweis¬verfahren, das im Zweifelsfall eine Unterscheidung ökologisch und konventionell erzeugter Milch auf Ebene des Einzelhandels erlaubt, stellt eine sinnvolle Ergänzung der betrieblichen Kontrollen dar und dient gleichermaßen dem Schutz der Verbraucher wie auch der gewissenhaften Erzeuger.

Increasing sales of organic milk mean intensified tests for authenticity are required. In addition to comprehensive documentation, analytical methods to identify organic milk, and thus to differentiate it from conventional milk, are needed for consumer protection. Because the composition of milk is fundamentally dependent on the feeding of the cows, thirty-five samples from both production systems in Germany, including farm and retail milk, were collected within 12 months, to reflect seasonal variation, and appropriate properties were analysed. Nachweis der ökologischen Erzeugung Atlantischen Lachses durch Analyse stabiler Isotope und Fettsäuren Organic Eprints

Im Rahmen des Verbraucherschutzes werden Methoden zur Identifizierung ökologisch erzeugter Zuchtfische benötigt, um falsch deklarierte Produkte aufzufinden. Für den „Atlantischen Lachs“ gelang kürzlich erstmals die Unterscheidung zwischen ökologischem Farmlachs (OL), konventionellem Farmlachs (KL) und Wildlachs (WL) anhand des Isomerenmusters des Farbstoffes Astaxanthin. Diese Methode ist jedoch durch geeignete Futterzusätze manipulierbar.

Identification of organically farmed Atlantic salmon by analysis of stable isotopes and fatty acids Organic Eprints

Using isotope ratio mass spectrometry (IRMS), the ratios of carbon (δ13C) and nitrogen (δ15N) stable isotopes were investigated in raw fillets of differently grown Atlantic salmon (Salmo salar) in order to develop amethod for the identification of organically farmed salmon. IRMS allowed to distinguish organically farmed salmon (OS) from wild salmon (WS), with δ15N-values being higher in OS, but not from conventionally farmed salmon (CS). The gas chromatographic analysis of fatty acids differentiated WS from CS by stearic acid as well as WS from CS and OS by either linoleic acid or α-linolenic acid, but not OS from CS.
