In questo lavoro si presentano i risultati relativi ad una analisi dei prezzi di due prodotti biologici (pasta e olio extra vergine di oliva) rilevati in alcune città campione nel Nord, Centro e Sud Italia. Il lavoro fa parte di una più ampia rilevazione dei prezzi dei prodotti biologici effettuata in Europa. Utilizzando il modello dei prezzi edonici, si è tentato di verificare se il prezzo del prodotto biologico dipendesse in qualche modo dal tipo certificazione riportata in etichetta. In a world where more and more organic products are mass produced, and where most consumers have little – if any – contact with the organic farmers who have produced their food, many people feel that the underlying principles of the organic movement are coming under threat. According to our research consumers are mostly interested in additional ethical attributes like “higher animal welfare standards”, “regional/local production” and “fair producer prices” and they are willing to pay more for organic products which are produced following these higher standards. Taking into consideration individuals’ cognitive reasoning, and assuming that consumption of organic food has involved a change of mind about food experiences and food habits, we have identified the concepts, stories and theories mentioned by respondents in their discourses about organic food. Regular consumers trust organic products because they believe that they are healthier and tastier than any other product. A growing stock of information supports their food choice and confidence in organic food. The paper aims at contributing to a better understanding of the linkage between supply chain performance and possible performance improvement with respect to food quality and safety. Therefore, the paper addresses the question whether the level of collaborative planning and close supply chain relationships could help improve quality and safety of organic supply chains. The three main weaknesses in the performance of European organic supply chains identified are high logistic and transport costs, the level of input costs and low expenditure on research and product development. Il risultato principale della nostra ricerca ha confermato che la comunicazione degli attributi etici addizionali offre a molte aziende biologiche una reale opportunità di differenziazione dei propri prodotti nel più vasto mercato biologico. Molti consumatori e produttori sono d’accordo sul fatto che la produzione biologica in conformità al regolamento UE sull’agricoltura biologica (834/2007) non rappresenta la ‘fase finale’ in riferimento a una produzione alimentare sostenibile ed etica. The study was conducted as part of a EU-wide qualitative survey on consumer perception of organic products, carried out in 8 European Countries (Austria, Denmark, Finland, France, Germany, Great Britain, Italy and Switzerland). It aimed to investigate consumer motivations and barriers related to buying organic products, in order to better understand the consumer decision-making process. The paper presents results from an Italian study on the development of the food quality for poultry meat into the organic sector, using the Quality Function Deployment (QFD) technique. Results show that among the visual characteristics of poultry meat consumers assign greater importance to attributes strictly related to the animal welfare issue. Price and product appearance (colour and fat presence) come as second. To meet these needs, producers can effectively operate along the supply chain by acting on: housing type, genotype lines and stocking density (animal concentration/mq).
