Effect of Herbage on Milk Composition Organic Eprints

A grazing study was performed in 2006 over three two-week periods in May, June and August at the organic research station Rugballegaard, Denmark, where a herd of 48 Holstein dairy cows was split into four groups of 12 cows. Each group grazed one of four swards: 1) lucerne, 2) red clover, 3) white clover and 4) white clover with chicory, all four in mixture with perennial ryegrass. Milk and grass samples were analyzed to study the effect of each sward type on milk composition as well as seasonal variations.

Fatty acid and fat-soluble antioxidant concentrations in milk from high- and low-input conventional and organic systems: seasonal variation Organic Eprints

BACKGROUND: Previous studies showed differences in fatty acid (FA) and antioxidant profiles between organic and conventional milk. However, they did not (a) investigate seasonal differences, (b) include non-organic, lowinput systems or (c) compare individual carotenoids, stereoisomers of α-tocopherol or isomers of conjugated linoleic acid. This survey-based study compares milk from three production systems: (i) high-input, conventional (10 farms); (ii) low-input, organic (10 farms); and (iii) low-input non-organic (5 farms). Protections against photooxidation of milk by a high urate content Organic Eprints

Differences of susceptibility to light induced oxidation in milk with a low or high content of urate was studied. The natural urate content of the cows milk was manipulated by different feeding regimes. It was found that milk with a high content of urate was less prone to photo-induced lipid - and protein oxidation measured as the formation of lipid hydroperoxides and dityrosine, respectively. It is suggested that urate reacts directly with sensitized riboflavin and/or by reaction with singlet oxygen. The overall conclusion is that it is possible to improve the antioxidative capacity of milk by increasing the natural urate content through strategic feeding of the dairy cow.

Purification of glutathione-binding proteins from bovine milk and identification of glutathione S-transferase Organic Eprints

Glutathione is both a ubiquitous and abundant antioxidant in tissues and fluids, and critical as reducing substrate for several enzymes. Particularly, glutathione is utilized by important enzymes, such as glutathione peroxidase (GPx) and glutathione S-transferase (GST). The importance of these glutathione-utilizing enzymes for the oxidative stability of milk is, however, unclear. We have purified glutathione-binding proteins from bovine milk using glutathione-affinity chromatography and report as a novel observation the identification of GST m as a major glutathione-binding protein in bovine milk. GPx was not purified by the glutathione-affinity column.

Effect of grazing fresh legumes or feeding silage on enzymes involved in the synthesis of milk fat in dairy cows Organic Eprints

The impact of fresh legume types or silage on the composition of milk fatty acids and transcription of enzymes involved in the synthesis of milk fat in cows was studied. Three groups of cows grazed white clover, red clover and lucerne, respectively. A fourth group of cows was fed maize/grass silage. The cows grazing high proportions of legumes produced significantly more C18:1 trans-11, C18:2 cis9-trans11, C18:2 trans10-cis12 and C18:3 fatty acids than cows fed silage. White clover and lucerne grazing resulted in significantly less output of C18:1 trans9 in milk than red clover grazing and maize/grass silages.
