Several studies have shown that consumers with a high organic consumption often have dietary habits that a more in line with the official recommendations of eating more fruit, vegetables, and less red meat. This paper takes a novel approach by investigating whether changes in consumption patterns are also related: To what extent is an increase in organic consumption accompanied by improvements in dietary habits? We also investigate what motivates the consumers to change their habits and in what order the changes occur. Many consumers had relatively healthy dietary habits before the increase in purchases of organics. Policies encouraging consumers to follow nutritional dietary guidelines are widely used by governments as a strategy to improve public health. Organic consumers seem to adhere to nutritional guidelines more than others, but it remains obscure why, exactly, there is a correlation between eating healthily and organic consumption. Based on six focus groups, 1519 survey respondents, and purchase data from 2449 households (all data collected in Denmark), we found that not only dedicated but also occasional organic consumers eat more fruit and vegetables and less meat than consumers with no or little organic consumption. I denne bog har vi samlet resultaterne fra tre forskningsprojekter, som studerer økologiske fødevarer ud fra en forbrugersynsvinkel. Mange andre projekter undersøger ved hjælp af naturvidenskabelige metoder den økologiske produktion og dens direkte effekter på natur, miljø og dyrevelfærd. Vi har derimod i de tre projekter anvendt samfundsvidenskabelige metoder til at undersøge motiver og ønsker hos de økologiske forbrugere samt de heraf afledte effekter på for eksempel folkesundhed og lokale arbejdspladser.
