Confirmation of the authenticity of organic milk is an urgent problem in recent years due to the rapid development of the organic products market. The cattle diet, season, geographical and climatic characteristics of the region can effect on the fatty acid composition of organic and conventional milk. The aim of this work is analysis of the differences in fatty acid composition between organic and conventional milk for the confirmation of the authenticity of organic milk. It was shown that the content of C18:1t11, Conj C18:2 cis-9, trans-11 were higher in the conventional milk, and C18:3n3 ― in organic.
