In this study we have examined what kind of views and attitudes consumers and other food chain actors have concerning organic food and its production and how these views and attitudes differ. The survey data from year 2003 consist of responses by 1 186 consumers and 333 other food chain actors. The main methods used in the analysis of survey responses were factor, cluster and discriminant analyses. With the help of these methods, consumers and other food chain actors were clustered into various groups. The discriminant analysis was based on respondents’ attitudes towards organic food and organic food production. Conventional retailers play a significant role in selling organic food, and therefore, it is important to understand how the demand-supply chain of organic food works as an element of the conventional food system. The proportion of organic food in the conventional food chains is small, and this poses a great challenge to the performance of the chain. Surveys and case specific studies on consumers and supply chain actors indicate that the changes in the conventional food system have an impact on the organic chain. The main obstacles to the optimisation of the organic food chain include poor information management, insufficient communication with consumers, and the diverging objectives and needs of the actors of the chain. |

Lengths of organic supply chains have been increased by the emergence of intermediaries between consumers and organic farmers. The involvement of supermarkets forces the organic chain to merge into the conventional food chain. The small segment of organic products and consumers creates a challenge for the performance of the organic chain. The case-studies described here were conducted to learn more about the performance of the chain. For this purpose, actors along the chain (from farmers to consumers) were interviewed. Three dimensions affecting performance were found, as well as three different levels of commitment to organics. |
