The overall acceptability of 202 consumers has been analysed by ANOVA, multiple means comparison, cluster analysis and internal preference mapping (MDPREF). Three clusters are found with different preference criteria. These clusters can also be characterized according to actual purchase behaviour, declared consumption habits and sociodemographic characteristics. This study demonstrates the importance for the agro-food industry of examining consumers’ individual preferences as well as average ones, to obtain relevant information including not only the consumers’ preference trends, but also the most suitable segment to target a new product. Consumers in developed countries are becoming increasingly aware of food safety, that is to say, the influence of food on human health. The public concern is deeper for those products, such as beef, that have suffered gravely from disease (BSE). In this paper, the factors that influence the decision of purchasing two products, fresh lamb and beef, are investigated. The linkage between quality labels and attributes of food safety is also studied. Finally, the conjoint analysis is used to discern differences in preferences between consumers of labelled meat and non-consumers and to estimate the marginal willingness to pay for the main attributes, in particular, for the quality label. In the last years, ethnic food has been successfully introduced in the Spanish market. In this research a choice experiment is conducted in order to investigate consumer’s preferences toward ethnic food and the influence of psychographic variables in consumer’s decisions. A nested logit model is employed for this purpose, with a two level nesting structure: the first decision is whether or not to consume ethnic food at all; and the second decision combines ethnic cuisine and the consumption situation. El artículo investiga las actitudes de los consumidores hacia los alimentos nuevos mediante la escala FNS (Food Neo-phobia Scale). Apartir de ella se obtiene el perfil de los individuos más y menos proclives a la introducción de nuevos alimentos en sus dietas, denominados respectivamente, «neo-fílicos » y «neo-fóbicos». Entre estos alimentos nuevos, los étnicos o propios de un país y cultura, están empezando a introducirse en el mercado español, especialmente impulsados por la inmigración. A partir de la escala actitudinal, se obtienen perfiles socio-demográficos y de comportamiento de compra y consumo de alimentos étnicos, claramente distintivos, lo que permite extraer información relevante de cara a la evaluación del potencial del mercado étnico en España. |

The change in emphasis of European food policy toward legislative certification schemes has shifted the research agenda toward investigating the link between the concept of 'territory' and food product perceptions. However, a relatively neglected aspect of this literature is the exploratory qualitative work investigating consumer perceptions of 'symbolic' attributes within territorial products. A quantity-dependent hedonic model is used to study consumers’ actual purchases of cured ham, recorded through scanner in Spain, between April 2003 and March 2004. A Zero Inflated Negative Binomial (ZIB) model is applied because of the high proportion of zero purchase-values and the finding of overdispersion in the data.
