Parasitized and non-parasitized hake fillets obtained at fish processing plants were compared in order to assess the efects of Kudoa rosenbuschi myxosporidia on muscle of Merluccius hubbsi. The following studies were carried out: a)incidence and severity of parasitism; b)proteolytic and spoilage at a histologic level; c)pH and proximal composition in parasitized and non-parasitized fillets; and c)parasitism action on gelified products. Gel strength, elasticity and organoleptic level in gelified products were lower for parasitized samples. Recommendations are put forward as to conditioning and cooling of the catch and subsequent processing in order to lessen the effects of parasitism. |
