Sensory profile of 'Douradão' peaches cold stored under controlled atmosphere Ciênc. Tecnol. Aliment.

The sensory quality of 'Douradão' peaches cold stored in three different conditions of controlled atmosphere (CA1, CA2, CA3 and Control) was studied. After 14, 21 and 28 days of cold storage, samples were withdrawn from CA and kept for 4 days in ambient air for ripening. The sensory profile of the peaches and the descriptive terminology were developed by methodology based on the Quantitative Descriptive Analysis (QDA). The panelists consensually defined the sensory descriptors, their respective reference materials and the descriptive evaluation ballot. Quality evaluation of fresh-cut ‘Pérola’ pineapple stored in controlled atmosphere Ciênc. Tecnol. Aliment.

The purpose of this research was to determine the best gas mixture in controlled atmosphere conditions to store fresh-cut ‘Pérola’ pineapple, particularly in relation to the maintenance of visual quality and reduction of microbial growth. After sanitation, fruit was manually peeled, sliced and dipped in 20 mg.L-1 NaOCl solution for 30 seconds. Then, the excess liquid was drained and the slices were placed in sealed glass jars connected to a flowboard installed in a cold room (5 ± 1 °C). Entre as hortaliças minimamente processadas, a cenoura é uma das mais populares, sendo comercializada de várias maneiras: raladas, cortadas em fatias, palitos, e ainda apresentadas na forma de mini-cenoura (baby carrot). O objetivo deste estudo foi determinar as taxas respiratórias de cenouras (Daucus carota) da cultivar Nantes minimamente processadas. O armazenamento foi realizado nas temperaturas de 1 °C, 5 °C e 11 °C, e 90% UR. A taxa respiratória foi determinada usando um fluxo contínuo de ar. This study was carried out with one of the most important cultivar grown in the State of Sao Paulo, Brazil, which has gained the preference of consumers, due to its sweet taste, intense skin color and large size; however, these fruits are susceptible to chilling injury when cold stored for long periods. The use of controlled atmosphere (CA) with elevated CO2 and reduced O2 concentrations prevent the onset of the chilling symptom. The present study evaluated the effects of modified atmosphere packaging on inhibition of the development of chilling injury symptoms in 'Douradão' peach after cold storage and the possible involvement of cell wall enzymes. Fruits were harvested at the middle stadium of ripening, packed in polypropylene trays and placed inside low density polyethylene (LDPE) bags (30, 50, 60 and 75 µm of thickness) with active modified atmosphere (10 kPa CO2 + 1.5 kPa O2, balance N2). 'Douradão' peach is a perishable product and when cold stored is subject to chilling injury. The objective of the experiment was to evaluate the effect of modified atmosphere packaging (MAP) and cold storage on quality and storage life of these peaches. Fruits were packed in polypropylene (PP) trays and placed inside low density polyethylene (LDPE) bags (30, 50, 60, 75 μm thickness) with active modified atmosphere (10 kPa CO2 + 1.5kPa O2, balance N2). Com a finalidade de reduzir as perdas ocasionadas pela degrana e podridões na pós-colheita de uva 'Niagara Rosada', foram realizados em 2005, em vinhedos localizados nos municípios de Jales e Louveira, São Paulo-Brasil, experimentos utilizando-se de cinco concentrações de cloreto de cálcio (CaCl2) a 0; 5; 10; 15 e 20 g.L-1, com ou sem a aplicação de 100 mg.L-1 de ácido naftalenoacético (ANA). Com base nos resultados obtidos, realizou-se, em 2006, experimento com quatro concentrações de ANA a 0; 50; 100 e 150 mg L-1, associadas ou não a 10 g.L-1 de CaCl2. As aplicações do ANA foram realizadas um dia antes da colheita, e a do CaCl2, no início da maturação das bagas. There is a lack of information about fertilization of pineapple grown in the State of São Paulo, Brazil. So a field experiment with pineapple 'Smooth Cayenne' was carried out to study the effects of NPK rates on yield and fruit quality. The trial was located on an Alfisol in the central part of the State of São Paulo (Agudos county). The experimental design was an incomplete NPK factorial, with 32 treatments set up in two blocks.
